Spinach Quiche

how easy! and using ingredients I keep on hand. Perfect with fresh eggs and spinach from the farmers market. Also love that the fat/carb/calorie-laden crust isn't necessary. Thanks!

Pink Lemonade Pie

Was looking for a recipe a friend recommended a few years ago that was a no bake pink lemonade cheesecake. Add a brick of softened cream cheese to this one and VOILA! This has become a favorite at my house, both with family and when entertaining. I tried it without the cream cheese and didn't like it as much.

Fudge

Holy ****!!! My husband is a huge fan of fudge, but I have never cared for it. He insisted that I play around with recipes and flavors until I find what works for me. Not one to eat "straight chocolate" I used my other favorite: cinnamon. Half cinnamon chips, half dark chocolate chips... the walnuts provide a texture variant and a compliment to the cinnamon in a way that can only be described as decadent. Not only that, it came together in 5 minutes flat, perfect for my busy schedule, and without standing over a hot stove babysitting a thermometer. Thanks Dana!

Salmon Spread I

Grilled my own salmon. Added 1/4 cup FF plain yogurt to make it a little easier to dip. Subbed dill for the seafood seasoning. Amazing!

Hummus I

Wow. This tastes just like the stuff at my favorite restaurant, except needed a little salt and more garlic...both easy fixes. Also recommend using a REALLY good food processor. Came out perfectly. Texture and flavor are really authentic.

Sausage Balls

I am snowed in, and can't make it to Christmas dinner, or the grocery store. I happened to have the ingredients for this, with a couple minor changes. Turkey sausage instead of pork, and 8 oz. sharp cheddar and 8 oz. Monterrey Jack. Lacks the "sharp" flavor, which I miss, but still delish.

Keftedes - Greek Meatballs

Yum!!!! I grilled on the Foreman rather than frying (cut a large potato in half and set the pieces upright in the bottom corners to keep the lid from smashing the meatballs) and served with spaghetti noodles tossed with garlic oil and basil. My husband loved them!!!!

Fish in Foil

I have been cooking fish like this for years! It's good with any kind of fish, and each kind can be seasoned according to its area of origin for an authentic flavor. My family is fond of Mediterranean varieties. Also, take leftover spaghetti noodles, place them in a gallon ziploc bag with olive oil and seasonings, shake well, and refrigerate. They're ready in a moment's notice for a delicious and beautiful bed for your fish.
