Apple Loaf

Linguini with Vegetables

I used a smaller pasta and added 1 lb of asparagus. I also put a lid on the veggies while they were cooking to steam them a bit. This left me with more juice in the bottom and it was very nice on the pasta.

Slow Cooker Rosemary and Red Pepper Chicken

This was great. I served it to company and they could not say enough about how much they liked it. I used white wine and a can of diced tomatoes as other suggested. I also cut up the chicken into bite size peices. Served over pasta.

Green Chile Chicken Stew

This was a great quick meal for dinner. I used a small bit of green chile and omited the habanaros. At the end of the cooking time I added a bag of southwestern mixed vegtables.

Cooking Light magazine's Zucchini Bread

I used 2 mashed bananas, 1 cup sugar, 1/2 of the flour as whole wheat flour, 1 cup nuts, 1 cup chocolate chips. The batter was a bit dry so I added some vanilla yogurt. Cooked in a single large loaf pan about 10 minutes longer. Everyone loved it.

Banana Banana Bread

I omited 1/2 cup of the sugar, added an extra banana, replaced 1/2 cup of the flour with whole wheat, used crunchy peanut butter, omited nuts and added 1/2 cup of chocolate chips. We love it.

Belle and Chron's Spinach and Mushroom Quiche

I made some subtle changes. I used frozen spinach and after thawing it, I squeezed the water out of it. In addition, I followed other recommendations and used five eggs and ¾ cup of half-and-half. It was still a bit moist and took an additional 10 minutes to cook. I really enjoyed this recipe and will be making it again.

Sauteed Garlic Asparagus

Easy and good. I used frozen asparagus spears and cooked them in the bag in the micro. I then put them in a serving dish with the butter and garlic and heated another 2 minutes to melt the butter.

Easy and Delicious Chicken

I used a blue cheese vinigarette. I omitted the soup and made a white sauce using some of the juices in the crockpot. I also added a package of spinach and served over noodles.

Garlicky Summer Squash and Fresh Corn

I used a bag of mixed vegtables with corn and asparagus. Cooked them in the micro and the squash in the skillet with the butter, olive oil and garlic. Tossed together to serve.

Asparagus, Chicken and Penne Pasta

This was really good. I cooked the chicken in a covered casserole dish with the oil and spices. Added broccoli and cooked vegtables sepperately. After the chicken was done I diced it and added it to the pasta with the acumulated juices.

Whole Wheat Banana Nut Bread

I did make some changes. Based on the previous reviews I added 1 teaspoon of cinnamon and for a lighter consistency; I replaced ¾ cup of whole-wheat flour with all-purpose. In addition, if you mix all the wet ingredients with the mixer then add the dry and mix by hand until just moistened – do not over mix – you will get a lighter and fluffier texture. I replaced the water with yogurt and added the baking powder with the flour. We love chocolate chips in our banana bread so I added ½ cup of chocolate chips too. Loved it.

Asparagus-Zucchini Rice

This was a huge hit with my family. I put the rice, water and vegtables in the bottom of my rice cooker. I put the vegtables in the steamer basket of my rice cooker. When the rice and vegtables was done tossed them together with the butter.
