Anniversary Chicken I

I love this recipe. But, I did change the bacon to Canadian bacon (less calories)and the ranch dressing to fat free. It is very flavorful and easy. I will use this when I need something for a large group.

Black Bean and Salsa Soup

I took this to the office for a pitch in Mexican Lunch. Everyone loved it the pot was empty. I did add sauteed onions and garlic and I didn't have vegetable stock so I used chicken, it was easy and fast.

Swiss Chicken Casserole II

I thought this was really easy and delicious. I did use mushroom soup because I had it and added fresh sliced mushrooms too. I also used half a cup of white wine instead of milk, gave it a little less soup taste. Used half heart healthy margarine, half butter. I will certainly make this again. PS The leftovers for another night were great too!

Chuck's Favorite Mac and Cheese

I made this to serve with a Pork roast and Lima beans for my son-in-law's Birthday dinner. It was great everyone loved it and he had three servings. I made it lite as some others mentioned. Fat free sour cream, cottage cheese and skim milk.

Brown Sugar Meatloaf

Made this last night and it is really good. Flavorful, moist and easy. I did add a couple of chopped garlic cloves and Italian seasoned breadcrumbs (that's all I had) and it will be a new family favorite. Thanks for the recipe.

Apple Crisp II

This is really superb. I am diabetic and I used Splenda instead of white sugar and Heart Smart instead of butter. Worked great and my husband asked when I was going to make it again. This is truly delicious, and with sugar free, low fat vanilla ice cream, nirvana.

The Best Bean and Ham Soup

Certainly the best lima bean soup I have ever made. Followed the recipe fairly closely but didn't add quite as much liquid as called for but it is truly a flavorful, hearty soup. With a big pan of cornbread and butter it is a great meal. Thank you for your recipe.

Creamed Chipped Beef On Toast

It is a tried and true recipe in our family. As always there is the but....I add fresh mushrooms to the butter and saute them for a few minutes. Instead of whisking the flour I put it in a jar with skim milk and pepper and shake rigorously. Then strain it while adding to the butter and mushrooms. The last thing I do is add a cup of frozen peas and a bit more freshly ground pepper.

Roasted Garlic Zucchini and Tomatoes

This is truly a delicious way to cook vegetables. Best thing is if you cook a lot and have left overs they are great room temperature or cold. PS: Don't use cherry tomatoes there is not enough juice. Use larger, sweet ones like Caspari.

Grandma's Lemon Meringue Pie

It was hands down one of the very best lemon meringue pie I have ever eaten. And, my grandmother made what I thought was the best. But, this rivals it hands down!! Don't tweek it just follow the recipe.

Spinach Stuffed Chicken Breasts

I flattened the chix breast then put a piece of ham on the breast, sautéed onions and garlic mixed them with wilted fresh spinach and feta. No mayo and no bacon. Followed the recipe after that and made a great sauce when it came out of the oven with some chix stock. Low in calories and delicious as well.

Spinach Basil Pasta Salad

It is truly a great recipe. Had to change a few things first had to use wheat penne pasta, didn't have pinenuts, used 3 slices of bacon instead of prociutto. But the basics were there will make it again and again.

Roasted Vegetable Ratatouille

I made this last night, and yes, with a few changes. Salted the eggplant for about 15 minutes, meanwhile I chopped the zucchini, squash, half a green pepper and half a box of fresh mushrooms. Added 3 or so tablespoons of evoo with about 6 crushed fresh garlic bulbs, s&p into a gallon plastic bag. Put all the chopped veggies, including by now the rinsed, dried and chopped eggplant. Dumped the veggies onto a cookie pan and baked at 400 for about 15 minutes. In a deep dish 9x13 pan used Paul Newmans Cabernet Marinara, with the veggies and mixed Italian cheeses, fresh parm layered it three times with cheeses and topped with basil and fresh mozzarella baked about twenty minutes. Grilled sweet Italian sausage with it.......delicious. It will be better as a leftover. Thanks for the great recipe.
