Zucchini Patties

only modified slightly: used freshly grated pecorino romano (vs parm), some fresh parsley, chopped fresh mozzarella (vs bagged shredded) also used 1/2 bread crumbs like some suggested and after I made about 1/2 of the fritters I added a little fresh dill... Highly recommend the dill!! Very good recipe made as written but also good changed up a bit... I think a slice of fresh tomato on top would have made these even better but I didn't have any...

Beer Dip I

Good dip! Needs more beer than called for (my opinion) or it is too thick I used Corona. I also used dill ranch (it is what I had on hand) and the flavor is great!! Thanks for the recipe.

Irish Egg Rolls

Good recipe - I added picking spice, used deli meat, slaw mix, diced up potatoes then simmered the veggies and spice in small amount of water until almost tender then added the deli meat and finished simmering with a bit more water. added salt and pepper to taste and allowed the mix to cool in a strainer. then filled the egg roll wrappers and baked at 400 until golden.

Marinated Pork Tenderloin

really good! the whole family loved it. I added more than a pinch of garlic powder, maybe 3 pinches... I had planned on making it for dinner the same day I marinated it but didn't get to it until the next night. I think I would suggest 24hrs to marinate because it turned out GREAT.

Southern Ham and Brown Beans

These are a lot like my families "soup beans" I must suggest that you try them with sweet pickle relish on top... trust me it is really good and you only need a spoon full. Also, fresh chopped onions and some cornbread (maybe fried apples too, ha ha) they are a meal in themselves and a favorite!

Beef Barley Lentil Soup

very good, I did make changes - stew meat, garlic, 2 bay leaves and canned french onion soup (mistakingly purchased meant to buy beef stock..) I was out of celery so I used ground celery powder. I think I may add more barley and less lentil next time more like 50/50. I also think it need a lot more salt than called for. thanks so much for the recipe!!

Easy Lemon Bars for Junior Chefs

good - very easy! I liked it with a lemon glaze (lemon juice, powdered sugar and a pinch of salt) poured over the top while hot to make a thin topping. This is good to have on hand for an easy and fast sweet tooth need.

Monday Night Hot Wing Dip

I too make this with canned chicken and use a 1/2 c of both hot sauce and ranch (or blue cheese). I serve with celery. Also, a very good option is to micro melt the ingredients with out the cheddar then mix in the cheese at the end and spread on both sides of a crusty bakery bread loaf split down the middle. Broil until bubbly and add a lot of shredded cheese, this is a fantastic sandwich and very easy!!
