Slow Cooker Apple Crisp

Reviewed: Dec. 1, 2013
This is great! Prepped the night before and took crock pot to work. It was a hit! Everyone wanted the recipe and made the office smell delightful. My co worker made it with half the topping, and said it was still just as good, so I may try that next time; it made quite a large amount of topping for one recipe.

Zucchini Yogurt Multigrain Muffins

Reviewed: Oct. 13, 2013
Loved these! Thy turned out great. I even had some modifications due to not having all ingredients. I didn't have applesauce so used extra yogurt, used oats instead of oat flour and didn't have honey, so used agave. Overall, they were great; will keep in my recipe box.

Italian Summer Squash Polenta Bake

Reviewed: Oct. 24, 2010
This was really good! I followed almost exact, but I only had some butternut squash pasta sauce from Costco, instead of regular spagetti sauce..which was great! My first time cooking with Polenta. Yum!

I really like this. Easy and a great way to use up fruit. I really like the topping. You could make it with any cut up fruit. I tried it with peaches, strawberries and blueberries. It was great.

Bean Soup With Kale

Loved it! I only had canned black beans (just fine) and canned tomatoes. This is flavorful and I feel like I am getting lots of good nutrients. Now, I know what to do with Kale.

Herbed Potato Soup

Reviewed: Oct. 17, 2009
This is the best potato soup I have made. Loved the flavor. I did follow some previous advice. I added some chopped carrots and had some sweet bell peppers on hand, so threw those in too. I also added garlic and a few slices of chopped bacon. You could add almost any veggie to this one. Corn would be good in there too. It is a great base recipe to add onto. The proportions were all good and the flavor spectacular!

Creme Brulee French Toast

Reviewed: Oct. 17, 2009
This is my new favorite weekend breakfast. I have made it before with milk instead of 1/2 & 1/2. It turned out fine that time. I made it today with 4 eggs and it also turned out fine. Next time I am reducing the amount of brown sugar. Reading the previous reviews helps. I think 3/4 cups brown sugar is plenty. Grand Marnier is a must, and we top it with fresh berries. The sweetness of the sauce and the sour of the berries is a nice combo. I am so glad I found this recipe!

Easy Chicken Alfredo II

Reviewed: Oct. 17, 2009
I really liked this for a quick weeknight dinner. I sauteed the chicken strips in olive oil and garlic. Did everything else in the recipe the same. It would be excellent with mushrooms in the sauce too. I will make this again. I was craving cream sauce and this is a lower fat sauce. I had Penne pasta which held the sauce nicely too.

Chicken Pot Pie II

Reviewed: Mar. 21, 2009
This was a great meal. I like the fact that you use only 1 pie crust top. I was out of carrots, so I added bok choy, red bell pepper, and corn to the other ingredients. I also added a bit of grated pepper jack cheese. It was yummy. I kept going back for more! My husband also liked it and want me to make it again. A good hearty, winter meal.
