Outrageous Chocolate Chip Cookies
I'll start by saying that I'm a cookie SNOB, and I pride my palette in the cookie realm. I appreciated what these cookies were trying to accomplish, but they really do come out as sort of a mild peanut butter chocolate chip cookie. The oatmeal definitely adds some minor crunchiness and chewiness, but my batches turned out very delicate and slightly dry - even when trying to undercook them a bit. Still looking for that perfect chocolate chip cookie recipe.

Balsamic Chicken
Solid, simple and quick dish. I used fresh thyme and oregano from the herb garden. Be careful not to overcook! We had leftovers, and we stored them with the extra balsamic reduction juices. The chicken was actually better the next day because of the extra marinating. Strong flavors, but not at all overpowering. The dish went nicely with a light salad and some cauliflower/mushroom risotto I made!

Parmesan Artichoke Casserole
This turned out great and was a hit at our Easter get together. I agree with another reviewer... I don't understand the 9x13. I also used an 8x8 dish. I threw in some fresh garden herbs in addition to the parsley (sage, basil, rosemary). To give it some bulk, I added a large handful of fresh spinach and two small, sliced zucchinis. I also used 3/4 cup mayo and added 4 oz. of cream cheese (cubed). I highly recommend adding the cream cheese.
