Guacamole

I just made this and it is amazing!! I've never made guacamole before so I pulled up this recipe and it was way too easy and the result is DELICIOUS! I am super excited I found this at the beginning of summer!

Restaurant Style Egg Drop Soup

I just made this, with not all the ingredients because I was limited on what I had on hand, but had a craving for the soup! No ginger or chives/onions, and used 3 eggs = results that were good, but not as satisfying as I had hoped. It seems to be lacking "egg" flavor as I am used to in restaurants, and the chicken is the main taste. Next time I may use water and bouillon cubes instead and definitely more eggs. Very easy to make though!!

Italian Spaghetti Sauce with Meatballs

Easy and DELICIOUS! It was my first time to make homemade sauce and meatballs (because my boyfriend refuses to use store bought sauce) and I couldn't be happier with the result! I made just a few slight modifications to the original recipe: I used half a pound of hamburger and half a pound of Italian sausage for the meatballs, I added about half a teaspoon of oregano to the meatball mixture, and I browned the meatballs in a skillet before putting them in the sauce (I prefer that texture, plus I wanted to drain the grease/fat off also). I started preparing at 11:30am, and once it was done I just let it simmer for hours. Excellent recipe!!

Tex-Mex Chicken and Rice Bake

This recipe is EXCELLENT! (with my mods of course!) To give it more flavor and color here is what I did: I used 6 breasts since I was cooking for 5 people. I cut them into strips, and then halves, and cooked them in a skillet with chicken taco seasoning. For my rice mixture I used mild rotel instead of salsa, a soup can of water, almost a whole can of corn, 1 cup of rice, and one can of black beans. Topped it with my chicken peices and then covered the entire thing with a thin layer of chedder cheese. Baked for 45 minutes, and for the last 5-10 minutes I scattered sliced black olives on top. Served with a dallop of sour cream on the side and it was AMAZING! I had 0 leftovers and eveyone raved about it. We will be making this again for years to come. Next time I might mix the cheese with sour cream and some chopped jalapenos to spread on the top for extra flavor. SO GOOD!!!

Greek Chicken Salad

Excellent and super easy! My mom and sister both loved it! I marinted my chicken in Italian dressing overnight, then broiled it, and shredded it - it was delicious and juicy! I used cucumber, feta cheese, and black olives and mixed with light Italian dressing. I will be making this for years to come!!

Peanut Butter Balls II

These are excellent! I used white bark coating instead of chocolate chips and shortening. Freezing the mixture for a little bit before balling helps quite a bit. I balled them, put them into little cups, and spooned the white coating over them. They almost look like white chocolate Reese's! Super easy and delicious. Perfect for family gatherings and holidays!

Roasted Pork Loin

My first attempt at pork loin (I'm just starting to find my way in the kitchen..) and it turned out great! I followed the recipe almost exactly, maybe a bit more garlic because I like it. It didn't need to cook for the full time, turned out perfectly moist and flavorful! I will definitely be making this again.

Cheddar Bacon Hamburgers

Excellent burgers!! I declined the horseradish, it's not my favorite. I didn't measure anything and just basically seasoned it to my taste. I probably used twice the cheese and would suggest that the more bacon you use - the better! Cooked them in a skillet and no problems keeping the patty together. This is going to become a regular at my house!
