Chicken Chimi in the Oven

Made it as is. The WHOLE THING was amazing. I used Pace Medium Picante sauce. I left in the cinnamon; I think it gives the recipe some real panache. We put sour cream, chopped onions, tomatoes, and shredded lettuce on top after it was all done. I will definitely be making this again. And again. And again. And again.

Green Chile Stew with Pork

Amazing flavor. I ended up putting a whole jar of green salsa in it, rather than a little at the end. My son didn't like it, but he's 8 and picky, so no surprise there. I kept it low carb and didn't add any corn or hominy, but it would definitely be a tasty addition if you prefer it.

Beer Margaritas

I don't know why in the world you would want to sully this wonderful margarita with 7up, but if it's your thing, more power to you. If you aren't savvy with sweet, you will love this recipe just the way it is. It tastes just like every amazing margarita I have ever had in a *good* Mexican food joint. If you want it slushy, just put all ingredients except the beer in a blender with a few handfuls of ice and blend. Personally, this recipe is so amazing that I don't know WHY anyone would want to tamper with it. The water cuts the sweetness of the limeade concentrate and the tequila just PERFECTLY. (I used Bacardi Margarita concentrate, even though it comes in 10oz cans...just add the juice of a lime to make up for the missing two ounces). My birthday falls two days after Cinco de Mayo, and so Margaritas and Mexican food are my annual ritual for the whole first week of May. I don't foresee myself ever needing to try and find another recipe again. This one needs to win an award just the way it is. Kudos!!

Slow Cooker Chicken Taco Soup

This dish was amazing. I think I pretty much made it as-is. I doubled the ingredients and froze half for another day when I wouldn't want to cook. The whole family loved it, even my picky eight year old son!

Hot Corn Dip

This dip is the best. Every time I make it, we never have leftovers. I like to add a seeded, chopped jalapeno pepper for spice and sometimes a little bit of shredded cheddar cheese as well. If you're looking for the perfect party appetizer, this is the one!
