Clark's Quiche

Reviewed: Jun. 1, 2012
Fantastic - so much flavor!! I changed the spinach to broccoli – just cooked frozen chopped broccoli a little in microwave and squeezed it out. And I didn’t do the ham, just doubled the bacon. And I just sprinkled some parmesan, didn’t use 4 ounces. And I left out the mushrooms and added red peppers to the onions while I sautéed them (in the bacon grease instead of the olive oil). I added no salt - the additional bacon and cheese salted it enough in my concoction. I've done it in a pie plate with a crust as well as crustless in a casserole dish - works well either way. My go-to egg bake recipe now. :) Bacon browning tip - cut the slab of bacon up with a kitchen scissors and brown it like ground beef - easy!

Pizza Dough III

Reviewed: Jan. 24, 2011
Great recipe! I mixed it in my bread machine on the dough setting. I didn't even let the yeast dissolve in the warm water first. I just put it in the pan in the following order: water, salt, oil, flour, sugar, yeast. The only change I had to make was to add 1/3 cup of flour. And I just used regular flour.

Glazed Meatloaf II

Reviewed: Jan. 19, 2011
This is the only recipe I use for meatloaf - love it! I cut the sugar a little - usually use only 1/4 cup (did it without the sugar once on accident, and it still tasted great!). When I have A1 on hand I like to substitute it for some or all of the ketchup, so yummy!! Two standard substitutions for me are: 1) use ground pork for half of the meat, 2) use 1/4 cup oatmeal in place of the breadcrumbs.

Buttery Soft Pretzels

Reviewed: Jan. 19, 2011
This is such a great recipe!!! I did the dough in my bread machine on the dough cycle. I did the yeast, sugar and water right in the bread machine pan and let it set per the recipe till it was creamy/foamy. Then I added the oil. Then the flour and sugar. And last of all the salt (keeping the salt and yeast furthest away from each other). The dough cycle ran, I rolled them out, dunked them in the soda/water and baked them. So easy. And so yummy!! I need to perfect my rolling skills and get them to stretch out a bit more, but even thick and chunky they were good!

Chicken and Biscuit Casserole

Reviewed: Jan. 19, 2011
AWESOME! I did this as a stew served over the biscuits. It was a little too thin so I thickened it with a flour/milk (or you could use water) mixture. I also cooked the chicken in the pan and removed it before sauteing the veggies - a little more of the chicken flavor. Overall this recipe is a big improvement on our old family favorite made with condensed cream of chicken soup, and I will be making it again! Continued. . .I've made this so many times now. Definitely a go to recipe. Still haven't baked it as a casserole - always serve it over biscuits. I usually add a bunch of vegetables including carrots, beans, corn, potatoes, and pureed zucchini. Also have done it in the crock pot - cook chicken for a few hours till it pulls apart, then add everything else and let cook till veggies are no longer crunchy. So much flavor. So yummy!!

Chicken Fettuccini Alfredo

Reviewed: Jan. 8, 2009
Absolutely fantastic!!! I have been using this recipe for about a year. It's my standard "take a meal to someone" recipe. And almost without exception I am asked for the recipe. I haven't done it with the mushrooms and tomatoes, but I think they would be good in it too. I think I do more garlic. I am surprised some people rated this very low and said it was bland - this is the full flavor alfredo sauce I was looking for! I've tried other recipes and they taste like a flour/glue paste sauce. Not this one. I'm pretty sure you'll love it!
