Super-Delicious Zuppa Toscana

Reviewed: Nov. 28, 2012
EXCELLENT! LOVED IT! I did tweek the recipe just a little. This was my first time making and trying this soup. I only used 2 large potatoes and not the 6 this recipe calls for. I also used Kale instead of spinach which I HIGHLY recommend doing. The next time I make this I will add more potatoes and more kale. Can wait to make this again!

Caramelized Chicken Wings

Reviewed: Mar. 15, 2012
Sticky, Gooey, Yummy, Delicious! OMG we LOVED these wings. I was worried because I love my wings crispy and as these were cooking I figured they would be somewhat soggy. Although they weren't crispy (don't think these wings are meant to be crispy) they were perfect. I followed the recipe but did brown them first. I also didn't have a problem with the sauce not thickening. Me and my hubby gobbled these up quick, and he said I should definitely make these again. I will make them again and eat the entire plate by myself LOL. Thanks for sharing this recipe!

World's Best Pasta Sauce!

Reviewed: Mar. 8, 2012
I was really pleased with the way this came out. I would rate it more like 4 1/2 stars based off the fact I tweaked the recipe a little. I used hot breakfast sausage from Jimmy Deans instead of the sweet sausage. I cooked the ground beef and sausage seperate from the sauce due to the grease factor. I also added oregano, a touch of garlic powder, and upped the amount of other spices. I ended up only using 1 can of tomato paste becuase I didn't want the sauce to thick. I let the sauce simmer for 30 minutes then added the meat. Then I let the sauce with the meat simmer for another 1.5 hours. I loved the addition of the fennel seed also. I will definitely be making this again and will never buy the jar stuff again.

Best Ever Tuna Salad

Reviewed: Dec. 1, 2011
I was really excited to try this recipe but in the end it didn't taste any better than any other tuna salad recipe. I paid $6 dollars for canned crab meat and you couldn't really taste it in the tuna salad. I didn't add the egg or sour cream because I don't really like either. I won't be making this one again.

Black Beans and Rice Chili

Reviewed: Nov. 23, 2011
Surprisingly this was very good. I was looking for something quick and easy so thought I would try this recipe. I didn't have any garlic powder so used crushed garlic instead. I also didn't have crushed red pepper so just used regular pepper. I'm only rating it 4 starts because the hubs thought it was just ok.

Mexican Chicken I

Reviewed: Nov. 4, 2011
Nothing special it's just chicken topped with salsa. I was looking for a quick delicious recipe for chicken breast I had in the fridge. This was quick and very easy to make but tasted just ok. I added a little oregeno and cayenne pepper to the salsa mix then once the chicken was done I topped it off with cilantro. I won't be making this again.

Pork Stew in Green Salsa (Guisado de Puerco con Tomatillos)

Reviewed: Apr. 24, 2011
This chili verde was just ok. I followed the recipe pretty closely but was just not blown away. My husband is mexican and he wasn't that impressed with this either. I will make this again but will use another recipe I found. Next time I make this I will roast the tomatillos and garlic and then blend it along with the cilantro. We like our food spicy and this wasn't spicy enough for us.

Italian Subs - Restaurant Style

Reviewed: Sep. 12, 2010
I just knew I would love this recipe. However, it was just ok to me. I followed the recipe pretty close as it's written. The only thing I did differently was add the lettuce at the end instead of mixing it in with the dressing. I also added more oregeno, that was just a personal choice because I love it. I didn't really care for the meat except the genoa salami which I love. We also heated the sandwich with the meats and cheese in the broiler before adding the other ingredients. Not a bad sandwich it just didn't blow me away. I won't be making this again.

Skillet Ole

Reviewed: Aug. 31, 2010
This was surprisingly good and easy to make. I used 1 pound of ground beef and left out the ground turkey. I seasoned the ground beef with plenty of salt and pepper. I also used the seasoned tomato sauce from Hunts. I think the cheddar cheese at the end really sets the dish off. I will definitely make this one of my go to recipes when I want something quick and easy.

Seafood Mocequa

Reviewed: Jun. 14, 2010
Not impressed at all! I followed this recipe pretty close and it seriously lacked flavor. The only thing I did differently was used clam juice instead of the fish stock as I could not find it. As I was cooking this dish I just knew it was going to be a hit. It looked good and smelled great. But was a big disappointment. I will not be making his again.

Cuban Ropa Vieja

Reviewed: May 31, 2010
We LOVED this recipe. It taste just as good as the ropa vieja we get at this cuban restaurant we love. I did make a few changes. I couldn't find flank steak at the store so used flap steak, the thin steak used for carne asade. I didn't brown the steak on the stove as the recipe states either. I seasoned my meat on both sides with salt, pepper, white pepper, and Sazon Goya. I also used the mexican style tomato sauce (El Patio). I let all the ingredients cook in the crockpot on low for 7 hours. I was suprised but the meat was done in a little over 7 hours. It could be because the meat is on the thin side plus I didn't have quite 2 pounds of meat. This was so delicious I'm making it again as I write this review! One last thing about the cilantro. I put this in at the very end and then let it simmer in the meat for 10 minutes before serving.

Taqueria Style Tacos - Carne Asada

Reviewed: Dec. 5, 2009
I only used the marinade part of this recipe so that's why I'm only rating it 4 stars. I used flap meat and let is marinade for 2 hours. We then cooked the meat in the broiler. Turned out really good. Next time I'm going to marinade it over night.

Crab Quiche I

Reviewed: Oct. 1, 2009
I wasn't crazy about this recipe but my husband really liked it. I did modify the recipe quite a bit. I added Old Bay seasoning, black pepper, garlic powder, and a dash of Tabasco. I also used really claw meat crab instead of the canned stuff. I don't think I will be making this again unless my husband request it.

Broiled Tilapia Parmesan

Reviewed: Jul. 1, 2009
I love the simplicity of this dish. I would rate the cheese topping 5 stars it was delicious. I did sprinkle old bay season on both sides of the fish before putting it in the broiler. I wish there was a way to infuse the topping flavor more into the fish. My boyfriend really like this dish so this will be in heavy rotation at our house. A quick and easy recipe that tasty good. Can't go wrong with that!

Shredded Beef for Tacos

Reviewed: May 11, 2009
This recipes just didn't do it for me. I used a 3.75 pound beef round roast. I put my roast in the crockpot already defrosted. The recipe says cook the defrosted roast for 5 hours on low. WRONG! After 5 hours this roast would not shred at all. I had to cook it for an additional 2 hours and it was still not easy to shred. The roast itself was just flavorless and swimming in juice. I will never make this recipe again.

Lemon-Lime Chicken Broil

Reviewed: Apr. 21, 2009
I really enjoyed this chicken. I lemon-lime juice really gave it a kick. I mixed the italian season and season salt together with some parsley then sprinkled on both sides of the chicken. Be careful not to cut the chicken in to small of pieces because they will burn. I like this recipe so much I'm going to make it again tonite.

Balsamic-Glazed Salmon Fillets

Reviewed: Mar. 24, 2009
This recipe was just ok for me. The balsamic vinegar overpowered the salmon. The weird smell of the glazed lingered in the house after cooking this salmon. I don't think I will be making this again.

Spicy Rapid Roast Chicken

Reviewed: Mar. 20, 2009
I LOVED this chicken. This and the sticky roast chicken are by far the best I've made. I increased the spices and added garlic powder and cajun season. I put the spices under the skin and inside the cavity of the chicken. I added 1/4 cup of water to the bottom of the pan to prevent burning. I had to cook my chicken longer than the recipe calls for. This recipe will be in heavy rotation at our house.

Slow Cooker Creole Black Beans and Sausage

Reviewed: Mar. 3, 2009
I made this recipe last night and it was a big hit. I did however make a few minor changes. I didn't cook this in the crockpot as the recipe states. I sauteed the green pepper, onion, and celery in two tablespoon of olive oil. I sliced the sausage and cooked them for 10 minutes in a separate pan. I added all the ingredients to the veggies and mixed everything together well. I added the sausage last and let all the ingredients cook together for about 45 minutes - 1hr. Once it was done we ate it over rice. I used red onion instead of the white onion. I also added 1 tbs of cumin. I will definitely make this again.
