Carrot Cake III
Made this now several times to exact portions and with some mods. First time I over mixed but second time forward perfect and made several times since! Some tips: I use my juicer to shred the carrots but retain all the juice and mix both with all the other wet ingredients before adding in the dry. It's finer but I can't be asked to shred by hand. What results is a superb moist cake to which you can add raisins, walnuts or other candied citrus peel (tried orange). Additional cinnamon or nutmeg to taste. Also tried soaking the raisins in some brandy or grand marnier. Provides a nice counterpoint to the carrot and/or nuts.

Buttermilk Pancakes II
Great recipe - I used part buttermilk and buttermilk substitute as hadn't bought enough (1 tablespoon of lemon and just under 1 cup semi skimmed milk left for 5 minutes).

Boscobel Beach Ginger Cake
A lovely cake, well turned out, used crystallized ginger (double) as it was all I had at time but looking forward to fresh ginger as it might give it a real kick for those who like the heat.
