Pixley On a Stick

Amazing Appetizer!!! What fun and SO TASTY! It couldn't be more simple, but be sure to use Silpat or non-stick foil b/c it is Super Sticky. We had this for New Year's snacks and it was a huge hit.

Jessica's Steak Oscar

This was VERY rich, but made a delightful Valentine's supper for my husband & son. They were blown away by how "fancy" it was. I served it with wild rice, and a fresh pear and apple salad.

Manicotti Alla Romana

For all the prep this dish is worth it! I was careful not to "overcook" my manicotti shells so they wouldn't tear while I filled them. However, I may have been too careful so that they weren't pliable enough. The whole box of cooked shells only used maybe ½ the filling mixture. Additionally, I would certainly use "LOW SODIUM" chicken bullion next time as I think the white sauce was too salty. My family ate second helpings w/out complaint though. This is RICH & FILLING. (My only substitution was cottage cheese for the ricotta - just a family preference.)

Pepperoni Pizza Sticks

This was a big hit with the kids! Even the adults around our Thanksgiving buffet spread enjoyed the crunch and the stringy cheese filling. (Best served WARM). One change I would make next time is to smear a bit of the pasta sauce into the egg roll wrapper before adding the other fillings. Otherwise, these were great & I will make them again.

Pear Bread I

This has become a MUST HAVE for my family at the holidays. It is rich, moist, "cinnamonny", and always delicious. I leave out the nuts for my family's preference, and fan out thin slices of fresh pear on top of the bread before it bakes for presentation. A true winner!

Easy Slow Cooker Apple Pork Roast

This was tender and flavorful, but it just wasn't my family's favorite. Just a bit too sweet & cinnamon-y I suppose. We generally love those flavors, but something about this was just over-powering. The Allrecipes recipe for "Tangy Pork Roast" is a much better bet!

Won Ton Wrapper Appetizers

Fabulous for party appetizers or anytime snacks! What's nice is that you can spice them up or down to taste by the choice of sausage &/or choice of cheese. Tip: Definitely PRE-COOK THE SAUSAGE FIRST though.

Breakfast Casserole

This is the easiest breakfast egg bake I've found. No overnight soaking req'd, and it only uses 2 slices of bread & 3 eggs. EASY! My only tip would be us use day-old or a hearty french bread. I've used softer bread and the texture just wasn't as good - almost mushy. Go w/a strong bread and really you could spice this up more if you like, adding green onions, mushrooms & the like. As is it makes a perfect pie plate full.

Cheesy Chicken Rolls

I enjoy this recipe for left over baked chicken. However, I make the sauce while the rolls are baking on a cookie sheet and then spoon the warm sauce over each roll as it is served. This allows the crescent to become crispy brown and fluffy as it bakes - not soggy.

Mini Coffee Cakes

Overnight Blueberry French Toast

Apple Bread

I tried this recipe out for Christmas and it was a new FAVORITE! I went along w/the reviews of others and used ½ white & ½ brown sugar. I also changed the spices to 1 tsp. cinnamon + 1 tsp. of pumpkin pie spice. Delicious!

Prosciutto Wrapped Melon Balls

I made this with West Texas "Pecos" catelope instead of honeydew and it was sweet & juicy wrapped in a suprememly salty layer of the prosciutto. The color combo was also eye-catching with the sprig of mint topper. A very elegant beginning at my upscale picnic. Served with shrimp filled croissant sandwiches & wine.

Apricot Nectar Cake II

This was a VERY moist cake, to the point that I had some trouble with it sticking to my bundt pan (which never happens to me). The flavor was gentle apricot and yummy. **I substituted apricot gelatin for the lemon which may have diluted the "punch" the flavor could have had.

Tuxedo Brownie Hug Cookies

This is a great idea. However, I found that either my brownie/cookies spread too much or I made them too large. Either way, when the candy was placed on top, it seemed larger then the photo.
