Chicken with Artichokes and Mushrooms

This was delicious, but after sautéing the chicken which I had cut up into chunks instead of leaving as whole breasts, I sautéed half an onion and two chopped garlic cloves for a few minutes before adding the artichokes and mushrooms and a little crushed red pepper flakes. Otherwise, I followed the recipe and served over butter and herbed egg noodles. (PS, I drained the capers). Will definitely make again (and may add sliced up brussel sprouts next time).

Zucchini Bread

This was delicious, but I had to tweek it. I didn't have sour cream, but I did have Greek plain yogurt which I used instead, but I goofed having put in a cup instead of half a cup. It turned out to be perfect and I think had I used just half a cup, it might have been too dry. It was such a hit, I made a second batch the following day again using the whole cup of yogurt and adding in dried cranberries. It was really yummy and a wonderful use of the leftover zucchini and/ or yellow squash pulp that I had from coring for a large batch of stuffed zucchini. I don't know which was better, the smell of it baking or the actual taste of the bread. They were both wonderful.

Balsamic Roasted Pork Loin

This was delicious and smelled heavenly and it looked awesome when I took it out of the oven. I did add a little garlic powder and honey to the balsamic mix. The family really enjoyed its flavor. I will definitely use this recipe again for pork and will try it next week on chicken.

Lamb and Winter Vegetable Stew

This was delicious! I added in 2 Idaho potatoes as well, but otherwise I stuck to the recipe, except that I transferred it over to the crockpot. It was delicious even before adding the sour cream and flour and would not hesitate leaving it out, or just adding flour to thicken up the broth a bit, but the sweet potato had disintegrated , so that thickened things up. In the future, I might add that a little later, but I did have it in the crock a little longer than anticpated. Definitely will make it again soon.

End of the Line Ham Casserole

I added frozen brocoli to this, along with some shredded pepper jack cheese and a little leftover vegetable stock that I had. I added a sliced tomato and chopped up two garlic gloves. I sprinkled some bread crumbs on the top with the parmesan cheese. I think I used 3-4 sliced potatoes. The first time, I actually parboiled the sliced potatoes, which cut the baking time back quite a bit. It was a huge hit with the family, though and great use of leftover ham.
