Vegetarian Tortilla Soup

I used a fresh onion and pepper added a can of drained and rinsed black beans, and made tortilla chips by baking corn tortillas in a 350-degree oven for 12 minutes. With the rich taste of the chopped avocado and chips, it was divine. I blended part of the soup towards the end; next time, I might blend it before putting in the beans and corn (so the veggies get blended, but not the more hearty elements).

Waffles I

I make this recipe often, and it always turns out very well. I make it vegan by substituting two tablespoons ground flax seed and six tablespoons water for the eggs and soymilk. (I usually up the soymilk to two cups.) Generally I substitute whole wheat flour for white flour. I also add double the sugar called for and a generous dash of cinnamon. A great way to start the morning!

Easy Broccoli Quiche

Hah hah, now everyone thinks I'm a master cook. :) Anyways, it turned out really well. The only problem was that I had too much egg and milk mixture and had to siphon off a bit of it before I could get it across the kitchen. But otherwise it was perfect.

Slow Cooker Lentil Rice Soup

I had the same problem as another poster - by the time the mix was finished cooking, there was very little "soup" left to it, just a rice and lentil loaf with vegetables here and there. So I added as much broth as I needed to get it up to a soup consistency after it was done cooking and it was perfectly fine. Not the best lentil soup I've ever had, but quick, easy, cheap and filling. Will make again.

Raisin Cake

Five stars for vegans and those who don't have the standard eggs, milk or butter on hand, three or four stars for everyone else. I enjoyed it and it had a unique, spicy taste, but it's not the best cake I've ever made.

Sugar and Spice Muffins

This was a delicious recipe, one that I will make whenever I need to impress someone around breakfast-time. The cinnamon-sugar topping is a must, but a tip - I melted 1/4 cup and used the suggested amount of cinnamon and sugar, and I had a lot left over. (Not a problem in my view. It will go towards my next batch which I'll probably make tomorrow because my friends will have eaten everything already!)

Very filling and yummy. I thought there was too much sauce and not enough noodles, so next time I'd try adding more noodles. Also it could use a little variety, so next time I make it I'll add some extra spices. Good, quick recipe!

Seven Layer Tortilla Pie

Delicious and filling, consumed just as merrily by the meat-eaters as the vegetarians. I served it with a box mix for Spanish rice and tortilla chips and it made a wonderful meal.

Sourdough Drop Biscuits

Really good - fluffy and light, very delicious. I used 1/4 cup vegetable oil instead of 1/3 cup and greased the pan the second time I made them, which (I thought) really improved the flavor and made them easier to handle. Definitely try if you have sourdough starter around.

Black Bean Lasagna I

Excellent recipe - served it to four die-hard meat-eaters and two vegetarians, and all of them loved it. I added more tomato sauce than recommended, but it was still a little drier than I would have liked. All the same it is definitely something I will make again!
