Mexican Rice III

Mixture for Meatballs, Meatloaf or Burgers

Buttery Alfredo Sauce

Amazing! Since I was only making it for two, I made 1/4 of the recipe and I still have leftovers. This is the best Alfredo I've ever tasted. Also, I did not find it necessary to simmer it an extra 20-30 min. I took it off the heat, then added the cheese and all the cheese melted just fine. Oh, I used asiago cheese in place of both cheeses so maybe that made a difference.

Homemade Flour Tortillas

Wow! These are amazing! I didn't have lard so I used cold butter and they turned out perfectly. They look just like store bought but taste a million times better. EDIT: I have made these a million times now and I actually like using vegetable oil more than lard or butter. They turn out the same no matter what you use.

Ginger Pear Bread

This just came out of my oven and it is amazing! I used a drained can of pears instead of fresh pears and just mashed them with a fork. Other than that I followed the recipe exactly!

Tres Leches (Milk Cake)

Made this as part of Thanksgiving dessert for my fiancé's family in Miami. Everybody said it was the best tres leches they have ever eaten! I used skim milk instead of whole and only put 1/4 cup sugar instead of 1 cup in the whipped cream. It was still very rich and creamy. The amount of liquid is perfect. It was just enough to be fully absorbed with no dry spots. We just ate it yesterday and people are already asking me to make it again!

Even though I like spicy, I only put half the can of peppers. It barely had any heat. Next time, because there will definitely be a next time, I will put the whole can. This is now my favorite beef recipe.

Cream Puffs I

Wow. Just wow. I used butter instead of shortening and 3 eggs instead of 4. These were absolutely amazing. The custard was thick, creamy, and delicious. The pastry was extremely easy to make and came out perfect. I filled a plastic bag with the custard and piped it into the pastries. I didn't have to cut them or anything. I just opened up a little crack on the tops of them and squeezed the custard in. I put a chocolate glaze on half of them. Next time I make them (there will DEFINITELY be a next time) I will frost all of them.

Belgian Molasses Bread

This just came out of the oven and it is delicious! I used my bread machines dough setting and baked it in the oven as 2 loaves. I made the recipe exact except I used 1 1/2 cups all purpose and 1 1/2 cups whole wheat flour. This is the first bread I made with whole wheat flour that turned out light and fluffy instead of dense.

Homemade Black Bean Veggie Burgers

I didn't have thai chili sauce or hot sauce so I added red pepper flakes. I added corn to it too. This was the first time I've ever had a veggie burger and I will be making these again very soon! Yum!

Pineapple Cake III

I used 1 1/2 cups sugar and only 1/2 cup oil. Instead of frosting it I toasted about 1 1/2 cups of coconut and stirred it into the cake batter. Very moist and delicious!
