Fried Empanadas

Very good! The dough was tuff to roll out. I tried half of the batch in the oven for 400 degrees per the other reviews, I didn't care for it too much. The other half I fried and it was way better!! Definitely fried is better, the dough was so much softer and flaky than when it was baked. I did my own filling, I used ground beef and added chorizo. I also added small cubes of potatoe and minced garlic and a fresh jalepeno with the onion. I used Goya seasoning, salt, pepper, cumin, oregano, and crushed red pepper and tomatoe.

Empanadas

I love this recipe!! I've made it with apple pie filling, mashed sweet potatoe with cinnamon and sugar, and vanilla pudding. Make sure to brush the edge before sealing with water to seal right. Also brush top of empanada with an egg and sprinkle with cinnamon and sugar. This gives a nice color. I bake them for about 30 min. Great recipe!!!

Banana Pumpkin Bread

I loved this recipe! I added chopped walnuts and no rasins, it turned out great. The second time I made it I wanted it for a dessert and I poured a vanilla glaze over it while still warm. Amazing! My family loved it.

Shrimp and Octopus Soup (Caldo de Camaron y Pulpo)

This was easy to make and it was really good! I added cilantro to the chopped veggies. I didn't have any pasilla peppers, so I added a 8 oz can of tomatoe sauce EL Pato, this has mexican seasonings with a kick. I like the soup to have a little color. I put the sauce in with the shrimp along with some dried orgeno. It was delicious!
