I added a lot more cayenne pepper - much like the "Norleans BBQ Shrimp from the American Grill in Scottsdale circa 1990. You can also cut back on the butter without missing it.

Chef John's Smothered Pork Chops

So good! I made this with a bone-in pork steak and let it simmer a bit longer in the gravy while covered loosely with some foil. Nice change from the can of mushroom soup gravy often found. If you don't want to buy buttermilk use the shot of lemon juice in milk trick.

Slow Cooker Cranberry Roast

My Best Clam Chowder

This would be good with either Malt Vinegar or a spot of lemon juice if you don't have red wine vinegar on hand. Turned out so good! I cut the recipe in half and added a bit of bacon. I was also out of onion so I used onion powder instead. It worked fine and I will make this again.

Classic Goulash

Sugar. It is missing a tablespoon of sugar plus more when served to sprinkle on to taste. That's how we make it in Small Farm Town, MN.

Iowa Pork Steak

I didn't have onion soup mix so I added a splash of soy sauce instead. I browned the meat removed it from the pan and cooked onions and fresh mushrooms until they released their liquid to de-glaze the pan. Then added the soup and poured the sauce mixture over the browned meat. Cooked covered at 250 for 5 hours while I was at work. Came home to heaven!

Recipe is a keeper! The squash was not as ripe as I would have liked it. It wasn't that beautiful orange color of John's in the video. Next time I will get the squash from the Farmer's Market instead of Walmart.

Authentic Pad Thai

I used brown sugar for the sauce and white sugar at the end with the salt. The noodles soaked at room temp for 45 minutes but I wish I would have let them sit another 10 minutes. I used shrimp instead of chicken and cilantro instead of green onion because that is what I had on hand. SO GOOD!!

YUM! I added the spinach in at the very last minute. You should not cook it for 10 minutes. I also used half grounf beef half sausage and sprinkled the top with fresh parm. I also LOVE the idea of making the meatballs into a rope and slicing them. Great idea!

Very IMPORTANT! CHILL the dough before making these or you will end up with black bottoms. The amount of butter to flour is the reason. My Grandma made these and her recipe says chill for 1 hr but otherwise the same.

Green Chile Chicken Soup

Really yummy. You will have to thin out any leftovers with a little milk when you re-heat it. I never heard of this soup before but I like green chilis so I thought I would try it. It is very rich but I will be making this again. Next time I think I will add some onion, carrots and potatoes.

Easy Spaghetti with Tomato Sauce

Be sure to peel the tomatoes by dropping them in boiling water then in an ice bath. I also added a bit more sugar than called for, I used a fresh chopping onion and more garlic powder. This is a good basic recipe! Great to use up all of those tomatoes from the end of summer.
