Blue Bacon Stuffed Mushrooms

DELICIOUS!! I did use pretty much the whole pack of bacon. TIP IF YOU HAVE EXTRA FILLING: I mixed the left over stuffing with ground beef and made bacon-blue cheese-mushroom burgers. I cannot tell you how good they were! I would say they may have been better than the mushrooms!

Easy Turkey Chili

I just made this tonight and turned out great! I used Rotel (canned tomatoes with chilies) instead of regular diced canned tomatoes to give it a little more spice. Also, I did this in a crockpot instead of stovetop. I sauteed the garlic, onions and ground turkey (salt, pepper and garlic powder on the turkey before cooking to season it). I put the rest of the ingredients in the crockpot first and mixed together. after the turkey is cooked, I added the mixture to the crockpot, mixed and cooked on high for 4 hours (or low for 8 hours). I also I left out the Kidney beans (because I do not like them)... and it turned out fine without them. I also added a can of corn to give it a little color. Great recipe! My son ate 3 bowls!!

BBQ Dry Rub

I was half way through mixing everything together and discovered I had no paprika. I decided to "take a chance" and substituted chili powder instead. I had no idea how it would turn out - so I did a little less than 1/4 cup (I think it was between 1/8 and 1/4). I also added about the same portion of black pepper too (my family is not "super spicy". By my surprise - it turned out FANTASTIC. the flavor had a sweet smokey flavor and a hint of "heat" from the chili powder at the end. My daughter, who does not like BBQ sauce, LOVED IT. it was very tasty.

Hot Artichoke and Spinach Dip II

This is a great recipe! I did make some alterations: I use sour cream instead of mayo, and also use 1/3 fat cream cheese. I alos put it into a small crock pot instead of baking, this is easier for serving as well. When using the crockpot, it usually take about 1 1/2 hours on high, I add the shredded mozzerrella bout 10-15 minutes before serving, cover the lid and let melt.

Pumpkin Soup

I did a smaller portion and I already had pureed pumpkin...I simmered 2 cups of pureed pumpkin, 4 cups of chicken broth, with sauteed onions and garlic (in olive oil) I added the spices in the recipe to taste - plus I seasoned with the nutmeg to taste as well. I brought to a boil, and then simmered for 30 minutes, at the end I also substituted the heavy cream with non-fat condensed milk- it turned out great and made it lower in fat. It is really a great recipe! Very savory with the taste of pumpkin throughout
