Peppy's Pita Bread

I thought they were great. They were quick and yummy! Update: I made these again today, and made an observation about why some puff and some don't. If you don't flour the dough before you leave it to rise for 30 minutes, it may stick to the counter. If it sticks, it punctures the dough and thus... it doesn't puff. So just make sure you flour it enough underneath so that it doesn't stick to the counter. Most of mine puffed and they are absolutely YUMMY again!

Hoot-n Holler Baby Back Pork Ribs

We didn't use the brown sugar because we used this local place's bbq sauce (its amazing by itself). Because the recipes says to cook it in the stock pot, the bbq sauce we brushed it with after didn't "seep" in very well. In the future, I might just marinade the ribs over night and grill them after brushing them with bbq sauce.

Blueberry Muffins II

When I ate these, I couldn't believe I made them, and that I didn't get them from some fancy restaurant. These were amazingly wonderful! I tried it without the sugar on top... and I definitely like the ones with the sugar better. It crystalizes the top and it makes them scrumptiously crunchy on top (but not too crunchy). They were great. I will definitely use this recipe over and over again!

Chicken Carbonara

This was a pretty good recipe. It was really simple and very easy to make. I thought there was too much chicken for the recipe as a whole, but overall it was pretty good. I'll probably make it again.

Baked Kale Chips

I made these yesterday and loved them. In my estimation, I don't feel like seasoned salt is a good addition to the kale chips. I also think that whatever salt you use 1 tsp is a bit too much. After I dried all of the kale, I put it into a plastic bag with the olive oil and salt and shook it until everything was evenly coated, and then put that on the baking sheet. Very tasty, but I will be using less salt next time around.

Stovetop Granola

I made the suggested adjustments and it turned out great! I think 3- 3 1/2 cups of rolled oats is probably better, if you want your granola to stick together better. Very flavorful. I added dried cranberries and chopped dates. Yum!

Chicken Taquitos

I may have used too much chicken, but I added more sauce to balance out the extra chicken I had put in. It was not as flavorful as I was hoping. My room mate used to make flautas/taquitos in college and hers were so much better than this! This could use a clove of garlic, maybe a 1/2 tsp of salt, and some cumin. Hopefully that'd give it a little bit of kick. Brushing them with olive oil and baking them did wonders! Eating them with guacamole, salsa, and/or sour cream made them taste much better.

Wonton Soup

I thought this soup tasted absolutely wonderful! There were a few changes that I would make myself, based off of what I've had most of my life. I noticed other people added vegetables. I would highly recommend that. Perhaps some celery or mushrooms. I also thought that the pork would be better if it were grounded or something, rather than having it chopped coarsely. And I also thought that the soup could use more than 3 cups of chicken stock. My husband loved this soup, but felt like there was not enough "broth" part for how many wontons were in the soup. I doubled the amount of chicken stock which I thought would be perfect. The next time I make this I'm going to add other vegetables, shrimp, and more chicken stock than the recipe called for. The general flavor overall was really good though!

Yeast Waffles

Best waffles we've ever had. Its just my husband and I, so we usually half the recipe and its perfect. Light & fluffy. Super tasty with pretty much any syrup, but we love having it with pure maple syrup, fresh strawberries & whipped cream. Deeeelish!

Shortbread Cookies II

I just made this today and its a great shortbread recipe. I don't own a cookie press, and my dough was sticky (I honestly expected this). So I just ended up dropping a dolop of dough in my cupcake tin and pressed it down flat with my 1/4 c measuring cup. Worked like a charm. Delicious!

Spinach Quiche

As mentioned before the recipe only calls for 1 pie crust, but this recipe definitely makes enough for 2 quiches. We only had one because its just me and my husband. If we had kids, we would have made 2. My husband and I both loved it, which says a lot for him because he normally hates quiche. :-) Great quiche recipe!

Best Guacamole

I didn't make this completely by the book, making the changes suggested by those who made this before. I used lime instead of lemon, used only a tsp of olive oil, also adding some cumin and a clove of garlic to the mix. Next time I will use cilantro and tomatoes along with the listed adjustments (didn't have those 2 things on hand this time).

Mama D's Italian Bread

Agreed on the directions being kind of strange. I cut the recipe down to 2 loaves. I only let it rise once before forming loaves, and couldn't let it quite rise for another hour due to time constraints. I took the advice of many here and put a pan of water in with the bread. I also used a pizza stone to cook the loaves on. The bread turned out more dark brown than golden, so I think I will cook it at a lower temperature for a little longer. Very good recipe though. My friends who have spent considerable amounts of time in Europe absolutely loved this bread (and talked about how much it was like the bread they had over there).

Lemon Cranberry Muffins

I would use craisins as opposed to fresh cranberries. It was a little too tart for my liking. And perhaps my choosing of cranberries was less than perfect, but the cranberries made the muffin taste weird. The base lemon muffin though was pretty good. I could eat that without the cranberries though.

French Breakfast Puffs

My sister had a recipe for these, but called them donut muffins. They were good. You really need to make sure you put enough butter and cinnamon on it. If there isn't enough, it doesn't taste as good.

Sugar Cookies

I haven't frosted mine yet, but they tasted fabulous! One thing the recipe didn't advise (this is if you want to do cookie cutter type sugar cookies), is to refrigerate or freeze your dough for a bit. I left mine in the freezer for about an hour, and that helped a lot with rolling out the dough. I took other peoples advice and only cooked it for 8-9 minutes, and they turn out soft that way. Great cookies! I will make these again for sure.
