Yeast Waffles

Best waffles we've ever had. Its just my husband and I, so we usually half the recipe and its perfect. Light & fluffy. Super tasty with pretty much any syrup, but we love having it with pure maple syrup, fresh strawberries & whipped cream. Deeeelish!

Mama D's Italian Bread

Agreed on the directions being kind of strange. I cut the recipe down to 2 loaves. I only let it rise once before forming loaves, and couldn't let it quite rise for another hour due to time constraints. I took the advice of many here and put a pan of water in with the bread. I also used a pizza stone to cook the loaves on. The bread turned out more dark brown than golden, so I think I will cook it at a lower temperature for a little longer. Very good recipe though. My friends who have spent considerable amounts of time in Europe absolutely loved this bread (and talked about how much it was like the bread they had over there).

Quinoa and Black Beans

I took the advice of others and only used one can of black beans. Kept everything else the same. I'm making this again and putting it into a taco with some chicken! I'm so excited!

Shortbread Cookies II

I just made this today and its a great shortbread recipe. I don't own a cookie press, and my dough was sticky (I honestly expected this). So I just ended up dropping a dolop of dough in my cupcake tin and pressed it down flat with my 1/4 c measuring cup. Worked like a charm. Delicious!

Chicken or Turkey Gyros

The cucumber sauce was awesome (I didn't have lemon, but substituted with lime. Also, I used half Chobani plain greek yogurt, and half Canola oil mayo from Hellmans. Even with these substitutions, it was delicious). The reason I'm giving this recipe 3 stars is because there was no marinade recipe for the chicken (I did marinade my chicken in some lemon, olive oil, salt, pepper, & oregano). Knowing that I don't like just "grilled" chicken for my gyros/shwarmas, I went to look for a recipe. Because it was lacking that part of the recipe that I felt should have been included, that is why I'm giving it 3 stars.

Baked Kale Chips

I made these yesterday and loved them. In my estimation, I don't feel like seasoned salt is a good addition to the kale chips. I also think that whatever salt you use 1 tsp is a bit too much. After I dried all of the kale, I put it into a plastic bag with the olive oil and salt and shook it until everything was evenly coated, and then put that on the baking sheet. Very tasty, but I will be using less salt next time around.

Buttermilk Pancakes II

I just made these, and used the advice of many to barely mix it. They were huge and very fluffy (AND I halved the recipe). They made 7 very good sized pancakes. I also added a little bit of vanilla & some blueberries. Very tasty! I will be using this again.

Spinach and Feta Pita Bake

Every time I make this, I'm reminded why I started making it in the first place! Even though this is a vegetarian meal, it is very filling. I use the Peppy's Pita Bread recipe on this website (using half wheat half all purpose flour) for the pitas. Absolutely delish!

Hash Brown Casserole II

Asian Orange Chicken

I thought this was really good, and tangier than the "normal" orange chicken you would get at a traditional chinese restaurant. Maybe the chicken breasts that I used were too big, but there wasn't much sauce once I added the chicken. I might use less of the cornstarch/water mix. Overall, it was very tasty, and I will probably use this again.

Spinach Quiche

As mentioned before the recipe only calls for 1 pie crust, but this recipe definitely makes enough for 2 quiches. We only had one because its just me and my husband. If we had kids, we would have made 2. My husband and I both loved it, which says a lot for him because he normally hates quiche. :-) Great quiche recipe!

Easy Chicken Satay

I didn't grill my chicken bits, but I threw all of the marinade into a sauce pan and cooked it over medium high heat until it was cooked through. I left it in the marinade and then just served it over calrose rice with the sauce on top. I liked it the way it was, but my husband thought that grilling it would be a better idea next time. The sauce was 100% amazing!
