Carrot Cake III

Reviewed: May 26, 2009
totally agree with this review, follow her directions: "After reading through 4-5 pages of the reviews, I consolidated the most referred alterations to this recipe to: 1) using 1 cup brown sugar and 1 cup white sugar 2) adding an extra teaspoon of vanilla extract 3) adding 1 8oz. can of crushed pineapple (I squeezed out most of the juice before adding it, I didn't want any extra fluids in the cake) 4) Added 1/4 teaspoon of nutmeg 5) added 1 extra teaspoon of cinnamon 6) used 3/4 cup canola oil and 1/2 cup applesauce. Pumpkin Honey Pie

Reviewed: Dec. 28, 2010
I made the recipe exactly as described and it was wonderful... although next time I may bake it just a tad longer. Everyone at our Thanksgiving dinner loved it, even the ones that don't normally like pumpkin pie.

Sweet Potato Pecan Pie by EAGLE BRAND®

Reviewed: Nov. 23, 2011
Great recipe! I was hesitant at first because I'm a loyal pumpkin pie fan, but this was different and delicious! It's like a tasty sweet potato pie center with a crunchy pecan pie crust. I too also left out the orange rind, and it still tasted great! The only thing I would change it using a 9 oz crust instead. I had extra filling and topping I couldn't use even though my 6 oz crust was totally full so 9 oz would have been perfect!

Quinoa and Black Beans

Reviewed: May 1, 2011
This was delicious! As a vegetarian I'm always looking for new high protein recipes and this is a great one! It was slightly more spicy than I would prefer, but I have a very sensitive stomach. If you don't like spicy things I'd advise you to go easy on the cayenne pepper.

Mint Tea Punch

Reviewed: Mar. 20, 2009
I made this punch EXACTLY the way the recipe dictates, and after letting it sit for a while I tasted it... it was really good, but a little bit bland... it definitely need a bit more kick... the 5 cups of water at the end diluted to citrus too much... I added more lemon juice (to taste) and it was better.

Baked Tofu Spinach Wrap

Reviewed: May 26, 2009
Very tasty. It was very simple and fairly healthy. I had to make sure to slice my tofu thin otherwise it tasted not done, and to really limit the dressing or else it can overpower the wrap.
