Apple Squares

This recipe was wonderful! I tasty way to use extra apples. I am only giving this 4 stars because I made two batches of these and both were a little dry for my taste. My first batch I followed the recipe exactly, and those were considerably more moist than the second batch. On my second batch I did not have any nuts in the house, so I substituted the same amount of old-fashioned oats in its place. And I drizzled some honey over the top before baking in addition to the cinnamon and sugar. Those bars were more cake-like and much more dry. I ended up glazing both batches with a simple powdered sugar glaze to moisten them up. They were delicious! I will be making these again, that's for sure!

All-Day Apple Butter

I can't say enough great things about this recipe. This was my first try at making apple butter and I couldn't ask for an easier recipe to follow. I used less sugar like other reviews had suggested and ended up using 1 cup brown and 1 cup white sugar. I double the amount of cloves because it's one of my favorites, and also used 2 heaping teaspoons of cinnamon. Not too sweet, not too spicy... Just pure perfection! I filled my 5-quart slow cooker to the brim with the chopped apples and used a fork to press down the sugar mixture before putting the lid on. After 11 hours had passed I transferred the apples to a blender in batches and pureed the butter until smooth. I then returned the puree to the slow cooker with the lid off for another 1 1/2 hours. The batch took a total of 12 1/2 hours and yielded an exact 8 cups of butter. I have processed it all in a water bath and they are sealed and ready for the holidays! Thank you Terri for this amazing recipe! It will be used again and again!

AMAZING! The Girl Scout version has always been my Dad's favorite, but these put the Scouts to shame! The look on his face said it all...This recipe is a keeper!

Bahama-Mama Pork Chops

Amazing! I made this for our Easter dinner and it was incredible. The only change I made was to substitute the dried cranberries for the raisins. I served this with some sauteed green beans and wild rice. Best Easter dinner I've ever head! This has become my new go-to recipe when I have guests. Thank you for this amazing and easy pork recipe!

Maple Salmon

Superb! I cut this recipe into quarters and I use it frequently with one 4oz. salmon fillet. It's easy to make just one serving! I like to use butter rich maple which adds a different twist to it. I favor this over plain teriyaki glazes any day!

Meatloaf in a Mug

Amazing! Who knew?! I topped mine off with a squeeze of ketchup and it made my night! This simple recipe can be customized for any taste. I've tried it several times and added a little crushed red pepper flakes, or some minced white onion.

Spicy Baked Sweet Potato Fries

I really enjoyed this side dish! I love sweet potatoes and I especially love spicy food. This was a great combination of flavors. I did cut down on the heat and the amount of seasoning for fear of them turning out too salty for my taste. Excellent!

Sweet and Sour Sauce II

Super easy! This recipe will be used again and again in my house. It's low in calories as well as sodium. I strained out the pineapple as it was cooling the first time I made this. On my second try I used crushed pineapple instead that gave it a great texture. I also added a few tablespoons to crushed red pepper flakes to give it a kick.

Creamy Vinaigrette

Amazing! I used mayo for my first attempt, but I'm very excited about trying it with Dijon. I used this vinaigrette for a pasta salad and there wasn't a noodle left in the bowl! Every person who tried it asked me how to make it. I added 2 extra cloves of garlic (my family loves garlic) and a teaspoon of Oregano for some color. This has become my go-to salad/pasta dressing.
