Boudreaux's Zydeco Stomp Gumbo

Very tasty indeed. Used creole seasoning instead of Cajun and added crabmeat but the crab didn't add anything to the flavor except to maybe thicken it a bit. As for the roux, I heated the oil then added a little oil to flour till all flour in bowl was moist. Added roux back to pot with garlic. Meanwhile in large pot where chicken/sausage was cooked added beer & broth to loosen juices on bottom of pot, then added roux. I also lessened amount of red pepper to a little over 1tbl. Will make this again for sure!

Chicken Scarpariello

Husband loved this & said next time I make this I must make more. I sauted onions/garlic prior to cooking chicken; also added s&p to flour and when adding wine, added a little more along with mushrooms, lemon juice, and some cornstarch to thicken sauce quickly. Very tasty- thanks for sharing!

Fettuccine with Sweet Pepper-Cayenne Sauce

Excellent flavor! Found this via the AR app for meals under 20 mins...and took my chances. Glad I did. Only changes I made was to add ground pork & mushhrooms while eliminating salt and using dried minced garlic. I would also do as others have suggested and reduce amount broth. Thanks for sharing!

Rich and Creamy Tomato Basil Soup

Great recipe! I Did make some changes though... Doubled the recipe due to all the tomatoes we got from the garden, used low sodium juice, 1/2 the butter, did not de- seed the tomatoes, and added a bit of worchestershire sauce for a deeper flavor. Can't wait to eat it tomorrow with fresh mozzarella paninis! Thanks for sharing this recipe!

To Die For Blueberry Muffins

I took these out early and they were still over done. Would suggest setting your timer for less than the minimum amount listed. Otherwise very tasty; I will be making these again & again... Next time w/the topping. Hubby enjoyed them & he's not a cake/muffin eater. Thx for posting!

Smoky Four Cheese Macaroni Bake

This recipe was okay. It had a decent flavor but didn't have as strong a flavor as I hoped and was a bit drier than I would have liked. Granted, the flavor may have suffered a bit due to having to substitue extra amounts of the other cheese to compensate for the loss of the the moldy Swiss I had just purchased and had to discard. For the cost, I think I can find a better recipe.

Guacamole

Excellent! I have never been a guac fan until I had some made fresh right before my eyes at a place in St. Louis. Ever since I have been on the hunt for a good recipe and here it is. Made it for a family gathering and I made sure I got the remaining bit left at the end of the day. The only adjustments we made were dried minced garlic which we eye-balled (we love garlic so we added plenty) and added extra cayenne for more heat. To maintain its bold flavors, it's best to serve cold. If serving at room temp, make sure your chips aren't too salty because the chips seemed to overpower the guac. Thanks for a great recipe!
