Baked Garlic Parmesan Chicken

Good and easy. I needed double the wet ingredients (oil and garlic) compared to the dry. My husband didn't care for the soft breadcrumb texture, but I was fine with it, especially given the ease of preparation!

Creamy Italian Dressing I

Love this dressing. Making salad dressings from scratch is still relatively new to me, but this one is a keeper and we have made it three times already since we first tried it about a month ago. Love being able to avoid the preservatives etc. in store-bought bottled dressings. So far we have made as written (except once when I accidentally used too much onion), but plan on trying soon with minced garlic instead of garlic powder. Definitely note Cathy's 10/10/2003 comment stating that onion should be about 1/2 cup. And sweet, of course. Thanks, Cathy!

Baked Chicken Wings

We baked on two sheets -- both made exactly as written, but on one of the sheets we added a little dab of a thick wing sauce (Syberg's) on top right before baking. The sauced batch was superior by far. It didn't even taste like sauce -- it just tasted punchier than the first batch. We noticed that the unsauced batch also had a LOT of juice running in the bottom of the tray. We think it was that the sauce sealed the skin and locked in all the good flavors from the recipe!

Easy Vegetable Beef Soup

It was chock-full of veggies and hearty potatoes, which was great, but the broth was just alright. Next time I will do something to flavor-up the broth, whether to add a little chili sauce or use a spicy-hot V8 or something...

Rich and Creamy Tomato Basil Soup

Because tomatoes are no longer in season, I substituted good quality whole canned tomatoes, undrained, with a little chicken broth, and I skipped the tomato juice. I used the full amount of cream but only half the butter. I really liked this but next time I think I'll reduce the cream by about 1/4, maybe work my way down to 1/2, we'll see. Thank you for the recipe -- almost exactly what I was looking for!

Super Easy Sloppy Joes

YUM. And yes, quick & easy. I like my joes sloppy, so I halved the meat, celery, and onion, but kept the quantities for the sauce ingredients the same. I used Heinz chili sauce.

Creamy Tomato-Basil Soup

Good flavor, although for me, a little too much onion and not enough tomato. However, I skipped the straining step, so maybe that was my fault. The color was pale orange, so garnish is key.

Lemon Chicken Piccata

Chicken was excellent and sauce was lemony without being bitter. I was impatient while browning the chicken in batches (which might have been the 2- and 4-year-olds tugging at my legs), but after that the sauce came together quickly. But the browning stage is a good time to get water boiling for pasta/veggies, etc. Regarding how many lemons to use, I used only one, but I'll confess I squeezed some of the juice from the half that was supposed to be dedicated to the slices. That is, I cut a lemon in half and squeezed every last drop of juice from the one half, then I squeezed just a little more juice from the other half to get that 1/4 cup, and finally I took the partially-squeezed half and sliced it thin for the required slices.

Haricots Verts Lyonnaise

Love it! But I always steam the green beans in the microwave to speed up things. Also, I love garlic, so I just add it directly (minced) to the butter, onions, and thyme. Makes the overall recipe about 30 minutes instead of 50.

Pepperoni Penne

Yummy! Followed recipe exactly except for type of pepperoni. It didn't sound appealing to use "normal" thin-sliced pepperoni (like what you'd use for pizza), so I bought thick-sliced pepperoni and cubed it. Now I have found pre-packaged "mini" pepperoni discs and am looking forward to using that!

Creole Chicken I

Followed recipe exactly; chicken was juicy and falling off the bones, but we found it a bit bland. If made again would use spicy sausage and cajun seasoning and/or red pepper flakes.

Mixture for Meatballs, Meatloaf or Burgers

Tomato-Cream Sauce for Pasta

I tried the recipe as written, but we didn't care for it. However, this may be easily attributable to two things: first, the recipe merely called for "one onion" (rather than specifying a specific size or amount of chopped onion) and I think the onion I used must have been about double the size of what was needed; second, the recipe stated a yield of 5 servings so I cooked a 5-serving amount of pasta to match but I think the sauce was stretched far too thin. The overall result was a bland oniony glaze. The next day I reheated the leftovers with a storebought can of spaghetti sauce and it was great - probably did benefit from the cream of the previous sauce. Willing to try again but will reduce onion and alter ratio of sauce to pasta.

Chicken Milano

Loved the flavors. Used farfalle (bowtie) pasta instead of fettuccini, so that my toddlers could eat it a little easier. Tried to jump ahead a little and heating water for pasta right away, and then found the recipe layout a little tricky to follow since I kept reading ahead and going back -- but this might just as well have been due to afore-mentioned toddlers pulling on my legs and arms! ;) Great recipe though, and earned the "restaurant quality" praise from hubby!
