Single mom, chihuahua fanatic, physician. Transplanted New Yorker living in SoCal post divorce and stayed for my son and the weather.
My favorite things to cook
Uh...hum....It used to be Arroz con Pollo. Things changed over time when I moved to SoCal and the only way to get Puerto Rican spices was by mail order from Goya and later my son became a vegetarian. So for myself, I really only like to "cook" sashimi and sushi. For others, I'm willing to try anything as long as I'm allowed to use garlic.
My favorite family cooking traditions
"Sniff"....."sigh"......the Thanksgiving turkey and the Christmas pig....."sigh." Now grayed ghosts of the past that come back to haunt me on the holidays as I stare at the Tofurkey Roast and realize that it never really was about the garlic mashed potatoes anyway.
My cooking triumphs
Beating vegetables into submission (making anything taste like meat).
My cooking tragedies
Burning hard boiled eggs.

Beef Egg Rolls
Changed this up a lot because my son is vegetarian. Used vegetarian substitute beef (take your choice). Added shredded carrots and scallions and some hoison sauce, mirin and rice vinegar to taste. Everything was raw when I rolled up it and then let it rest covered in the fridge for a day and then deep fried it in canola oil.

Barbie's Tuna Salad
We like really flavorful and spicy things in our house and I'm always trying to make things healthier. Simply, low fat mayo and less just to bind. Increase Parmesan to 2 oz and use 1/2 tsp of curry and some red chile pepper. THe onion and garlic should be fresh and chopped finely.

Scrambled Tofu
To make this totally vegan for my son and his friends I used extra firm tofu and drained the water out. Also added about half a tsp turmeric (did it by color) and then cumin, onion powder, salt and pepper to taste. Fried in vegan margarine for flavor (Nucoa works well). Cooked it for about five minutes to dry it up a bit and then crumbled some soy cheddar cheese into it. Served with avocado and tomato on the side. They totally were impressed by it and have always asked for it since when they are over for breakfast.
