Mud Pudding Cones

The filling was delicious, but the cones got extremely soggy very quickly - even in the 30 minutes in the freezer. I have some leftover filling in the fridge that I've put in cones and served immediately - that worked just fine. I would NOT assemble these ahead at all, though.

Pineapple and Pistachio Pudding

YUM! I didn't use sugar free, and I added pecans and sprinkled marshmallows on top. It's maybe not as fluffy as what my mom used to make, but it's just as good, and way more healthy.

French Country Bread

This was not just delicious, but very forgiving. I mixed it in the bread machine, realizing halfway through that I'd mismeasured some ingredients, so I stopped it, fixed the ingredients, then mixed. I put it in a bowl to rise. I made loaves, but my daughter child-handled a bunch of the dough and made tiny rolls and "bread worms". I then forgot to set the timer on the oven. It all turned out wonderful - my husband said it was "outstanding". It was much softer than I expected - I was expecting more of a crusty, holey French bread, but I'll make this again and again. YUM!

Slow Cooker Adobo Chicken

way too salty, even with low sodium soy sauce. I added a bit of brown sugar, which helped slightly. Not at all what I was hoping for.

Cumin Turkey Burgers

This was really good. I don't think I'll use the jalapeno next time. I'd rather offer them as a topping for those who like them. Neither my kids (nor I, quite honestly) loved the jalapeno, but other than that they were great. I will try adding a little red bell pepper next time.

Black Bean Vegetable Soup

Delicious. My kids slurped it up! Next time I'll probably add another can of beans (maybe kidney or navy) and some other veggies to thicken it up. The broth is nice, not too thin, not too thick, but it needs more "stuff". But my whole family loved it by the recipe also!

Banana Bran Zucchini Bread

YUM! I didn't bake this quite the full amount because it was browning quickly, and it was plenty done. I probably baked it 40 minutes. I also (hanging head in shame) used white flour because I was out of wheat. But it was a wonderful texture and I'm sure will be marvelous next time when I use wheat flour. I also used wheat germ instead of wheat bran. I'm sure this will be a family favorite!

Best Ever Chocolate Cutout Cookies

These were excellent with a few modifications. I added a pinch of cinnamon, a little vanilla, an extra egg yolk, and substituted crisco for 1/2 the butter. I rolled it between waxed paper. When rolled and cut, I put them in the freezer for a few minutes before transfering them to my cookie sheet because the dough was very soft. They had a great flavor that both children and adults enjoyed.
