Roasted Garlic Cauliflower

We love this recipe and make it about once or twice a month now. I don't change one thing. It's perfect. I've also used frozen cauliflower when I didn't have fresh. I just thawed it out and drained the water off of it beforehand.

Pumpkin Cream Cheese Muffins

Loved these and so did my husband who doesn't like pumpkin. I didn't do much altering, just used veg oil b/c I didn't have olive oil, and left out the nuts. The cream cheese filling was sooo good - kinda like a cream cheese kolache consistency. I put a little batter in, then a spoon of cream cheese mixture, then more batter, then topped it off with the topping. The muffin was also great, not too spicy. I also used fresh pumpkin. These are very pretty too. This is a regular for us now. Thanks!

Fried Corn with Smoked Sausage

I loved this and it really only took 20 minutes to throw together. I followed the recipe just as is except added fresh garlic instead of garlic powder. Even my 5yo and 2yo kids loved it. This is going in our monthly rotation for sure.

Banana Loaf

easy to make. Followed directions except substituted white wheat flour b/c I was out of white flour. I also sprinkled some sugar on top before baking to give it a little sweet crust. It was great and I'll be making it again.

Bat Cupcakes

The only thing I changed was that I used yellow mix and colored it green. They were so good and a huge hit with the kids and adults. They turned out so great. I will be making these every Halloween! I'll add a picture.

Spinach Basil Pesto

This was so good...I ate 1/4 of it with chips before it even made it to the ice cube tray for freezing. Great with pasta and chicken. This is now a staple and I will never buy pesto again. I also wait and add the cheese when I thaw it out. mmm!

Honey Baked Chicken II

Loved this recipe. Didn't change anything. The chicken was moist and sauce was so good over rice. I covered the dish with foil for the 1st 30 minutes. All 3 kids under 9yo and husband loved it. Best of all, I can now use the leftovers for Curry Chicken Salad and it'll taste so much better than just adding plain white chicken seasoned with curry powder. This is going in the dinner rotation, so glad I tried it!

Spooky Witches' Fingers

These looked awesome. They were a huge hit at the party, but most people didn't actually eat them. They were hard and crunchy and not sweet at all. My kids didn't even like the taste of them. I tried cooking some batches for a shorter amount of time, but that still didn't help the crunchiness. I'll continue to make these cookie shapes for Halloween, but I think I might try peanut butter cookie dough and see if they'll hold their shapes.
