Spanish Flan

A hit at a farewell party. The Flan turned out delicous. It had enough caramel so that it tasted very sweet and the consistency was perfect. I did add a tablespoon of vanilla so that the flan tasted more vanilla-y rather than egg-y and results turned out great. Although the caramel was hard to make, I got it on the second try. I would recomend a few drops of lime juice to the sugar and letting it stand without stirring on low-medium heat.

Fluffy French Toast

This french toast was awesome. I've tried alot of French Toast Recipes from this website, but none as good as this one. True to its name, these are the fluffiest French Toast ever; I like the fact that flour was added. Will definitely make again...

Hazelnut Chocolate Chip Scones

These are the BEST SCONES I've tasted yet... They are delicous. Although not as easy as they would appear to be you won't be sorry after you've tried them. The Almond extract stands out amazingly, and gives the dough an excellent taste. I only had 1/2 cup of chocolate chips, so I added in a half cup of cinnamon chips aswell. I also didn't have hazelnuts, so I used sliced Almonds instead. The results were incredible. One thing I would reccomend, though, is to lower down on the chips and nuts, unless you like your scones jam-packed with toppings. Another thing the instructions don't mention is that its probably smart to flour the dough on the cookie sheet so that they are less sticky when you put them in to bake. Lastly, I personally paint my scones with egg whites for color, but I think that's more optional than necessary. As they are, the directions are great and easy to follow; the scones are grade A+, I'll definitely be making these again.

Fluffy Pancakes

One of the best homemade pancake recipes on here. I used butter rather than shortening (as all I had was lard, and don't care much for the taste) and they came out all right. The only thing I found was that the salt stands out a little too much. Next time I might use less, or add a little more sugar.

Orzo with Parmesan and Basil

Best Orzo ever. Only recipe I follow step by step, and love. If you ever need a great side, or even a quick dinner, Orzo w/ Parmesan & Basil is the best choice. It is smooth, creamy, and delicous; as mentioned above, a mediterranean version of Mac & Cheese. Definitely a dish you won't ever get enough of...

Chocolate French Toast

These were OK. I would definitely call for less butter- they were very greasy over-filling. If I ever make these again, I'll certainly modify the recipe... Not what I expected :(

Apricot-Filled Empanaditas

This was a great guideline to making empanadas. Instead of Apricot jam though, we used an apple jam (very similairly to the way this one was made) and we baked them instead of frying them. They came out delicous.

Banana Muffins II

These Muffins were excellent!!! Very moist and very fragrant. What I did differently was add a teaspoon of Vanilla Extract which gave it a very nice punch, and used 2/3 cups of white sugar (instead of 1/2). 1/4 teaspoons of salt, and 2 eggs (whipped w/ beater). Needless to say, they came out perfectly sweet and extremely fluffy. Definitely a recipe I'll be repeating...
