Creamy Coconut Cake

My MIL introduced me to this recipe about 30 years ago, and it's been a family favorite ever since. It's heavenly! The only change I started making a few years ago is to only use 1/2 the coconut/milk mixture on top of the cake. I freeze the other 1/2 of the mixture for another cake. The cake still comes out beautifully and is absolutely delicious, but I think has a better texture, and isn't quite as high in calories this way. Love it!

Campbell's® Easy Chicken and Cheese Enchiladas

I made this tonight, and realized I'd made it once before. It's just okay, and I probably won't make it again. First off, I prefer corn tortillas, and I think the cream of chicken soup just gives a bland result. My preference for enchiladas are those made with corn tortillas, chicken, cheese, enchilada sauce, and cilantro.

Coconut Cream Cake I

I've made this recipe for nearly 30 yrs. My mother-in-law gave it to me shortly after I was married, and the first time I tasted it I was in love! I have changed the way I make it now though. While I used to pour the entire liquid mixture of sweetened condensed milk and cream of coconut over the cake, now I only use HALF of this mixture, and I freeze the other half for the next cake. It freezes VERY well! I've found the cake is a little lighter this way, and just as delicious.

Oatmeal and Applesauce Pancakes

I haven't made these yet, but a glaringly missing ingredient is salt. Just 1/2 tsp of kosher salt will make all the difference in the world to the flavor of this recipe.

Citrus-Basil Vinaigrette

I made this recipe this morning, to be served tonight. I thought the dressing was missing a bit of zing, so I added more lemon juice, vinegar, and honey. I also want to mention that I chose to use the lighter tasting canola oil and apple cider vinegar in the recipe. I think this recipe is nice for a base, but needs tweaking to taste.
