Turkey Pinwheel

Easier than I expected and the whole family enjoyed it. Next time I'll use marinara instead of ketchup, and serve with pasta & sauce instead of mashed potatoes.

Oven Scrambled Eggs

Balsamic Roasted Pork Loin

I hate to give this only 3 stars, but it wasn't a hit here. Maybe if I had used only 2 tsp of seasoning rub (McC's Montreal Steak Seasoning) instead of 2 tbsp. It was too peppery for my family's taste. It was VERY easy to make though and smelled fantastic while roasting.

Banana Crumb Muffins

WOWZA!!! This was delicious! We've got a new favorite banana muffin recipe in this house. I made 12 muffins and they were still sized fine. Came out crunchy all around since I used my Pampered Chef stoneware. YUM :)

Spinach Quiche

Delicious! I took the tip of cutting the butter in half and with all that cheese it was a good decision. I made this with a bag of fresh baby spinach and skipped the mushrooms because no one here likes them. Instead of layering everything in the pie plate, I mixed the filling in a bowl, then poured it all into the shell.

Cheesy Tuna Melts

Really good and easy to make. I followed another reviewer's suggestion to use double the filling, and added a pinch of onion powder for more flavor. Even our 4 year old liked it. This served three of us for dinner, two adults and the little guy.

Thai Peanut Noodle Stir-Fry

Easiest Eggplant

SUPER EASY! I cut the slices about 1" thick (per a prior suggestion), salted to remove any bitterness, and let it sit for about an hour before I coated it with breadcrumbs and grated parm. I baked for 45 minutes on my Pampered Chef bar pan, so it didn't need flipping. Served with spaghetti and marinara sauce and it was quite tasty!

Broiled Scallops

Delicious! Took another member's tip and sauteed on the stove instead for about 7 minutes with some stirring. Turned out with extra liquid, would have been great served on plain rice. Even my three year old loved it!

Blueberry Mini Muffins

I used 1-1/4C low-fat sour cream instead of the buttermilk. Came out quite tasty and moist. CAUTION: this recipe says it makes 42 servings, that's about 3 muffins per serving. I have 120 mini muffins!! They freeze well, so it's not a big problem. But we'll be eating muffins for awhile.

Granny Kat's Pumpkin Roll

I made this for a Christmas party and it was a huge hit! To help keep the shape of the roll while slicing, use this dental floss tip instead of a knife. Place a long piece of dental floss under dough 3/4 inch from end of roll. Cross ends of floss over top of roll; slowly pull ends to cut through dough. Repeat until entire roll has been cut.

Slow Cooker Pulled Pork

Really good and easy! Don't pour the whole bottle on all at once. I added some bit by bit just to coat the shredded meat, then let everyone add more as needed.
