Red Lentil Curry
This is a good recipe, but it turned out a bit dry, even when I used canned tomatoes and not tomato puree. I think I would add a few more tomatoes (maybe a can and a half of stewed tomatoes). It also seems like it would be an easy recipe to sneak a few more vegetables into, e.g., some spinach and a bit of cauliflower might be a good addition.
Overall, though, when combined with basmati rice, it makes an excellent work lunch, and it freezes well, so you can cook a lot at once and then enjoy it over time.
