Blueberry Cream Cheese Muffins

Reviewed: Jun. 17, 2011
I enjoyed this very much. Though I altered the recipe. I used one stick butter creamed with one cup sugar. 2 duck eggs. 1 1/2 cup butter milk. 1 cup white flour/1 cup whole wheat. 2 tsp. baking powder and 1/4 baking soda. 1 tsp salt. 2 cups blueberries. I made the filling the same.It needed more than 1 Tbsp filling. I think I will leave out the sour cream next time so it will be cream cheesier. Nothing ran over and the recipe made 12 muffins. I baked it at 350 degrees.

Jordan Marsh Style Blueberry Muffins

Reviewed: Jun. 16, 2011
An excellent recipe! I did use butter instead of shortening and used half whole wheat and half white flour. The muffins turned out very light and tasty and I loved the sugar sprinkled on top. I don't know why some one would give this a bad review. Sometimes I think it might have been a cooking error on their part.

Venison Cheddar-Jalapeno Summer Sausage

Reviewed: Dec. 29, 2010
Very good recipe! The cheese adds all the fat you need to hold the sausage together. I omitted the Mortons and added salt to taste. I cooked up little batches until it was just right. I tried it baked in the oven and also made it into patties. Delish! I liked it made into patties better though. I think next time I will keep the seeds in the jalapenos. It just wasn't spicy enough for me.

Cranberry Sauce

The best! So much better than canned and so easy to make! For a more gelatin like sauce, add one package of plain gelatin to the mixture. I make it every year for thanks giving.

My kids really liked this! Yeah! Even asked for it again! The cheese and sauteed onions complement the squash beautifully!

Crustless Spinach Quiche

This is a keeper! The muenster cheese is great! Provolone works well also. But I always add a bit of cayenne pepper and garlic powder. The whole family loved it!

Becki's Oven Barbecue Chicken

Reviewed: Oct. 21, 2009
Great barbecue sauce! I added a little cayenne pepper and garlic powder. And used it on chicken thighs. When cooking it I turned the thighs a few times and basted it until the meat fell off the bones. Fantastic! I am never going to buy BBQ sauce again!

Wilted Spinach Salad

Reviewed: Oct. 20, 2009
Great recipe but replace the bacon drippings with warmed olive oil and the vinegar with balsamic vinegar, cut the sugar to two tablespoons and add freshly crushed garlic. Proceed with the directions. You wont have a heavy greasy taste with the olive oil and it will be much healthier!

Bacon Chicken and Dumplings

Reviewed: Mar. 1, 2009
We love chicken an dumplings! The bacon was a great change but I made my own chicken stock seasoned with salt, black pepper, garlic powder and thyme. Did not use corn. Added fresh carrots and onions. Two percent milk instead of half and half. I also made my own dumplings With 1 cup flour 2 tsp. baking powder, half tsp. salt, 2 tbs. melted butter,1 egg,1/3 cup milk all mixed together. Very tasty!
