Charlie's Sweet Island Brussels Sprouts

Terrific recipe. The curry, brown sugar and jerk work so well together. Did mine on the grill in a throw-away aluminum pan. Really really tasty!

BLT Dip

I make this fairly often since it is so easy. I use the pre-cooked bacon and crisp it up in the microwave. I really don't think this tastes like a BLT, but still love the stuff. First time I served this, my friend thought it was lobster dip - I think because it's sort of pinkish and the bacon does get soggy as it sits in the dip. Draining the tomatoes we'll is a must. I serve this with wheat thins and everyone loves it. Even better the next day. One of my go-to recipes.

Easy Bacon and Cheese Quiche

Solid recipe. I used cubed ham (what I had on hand). My crust on the bottom came out a bit soggy and was actually better the next day. I served this with a spring mix salad with balsamic dressing which was a good counterpoint to the dairy. Will make again.

Steak House Au Gratin Potatoes

Loved the flavor. I didn't have heavy cream so tried to substitute with whole milk and butter but it came out kind of clumpy. Will try again with the cream and maybe add some Dijon mustard to kick it up a little. Did take a little longer to cook than listed. Overall I really liked it, but didn't love it. Close!

Chicken Scampi II

Very good. I also added a splash of white wine, extra garlic and some orange pepper cut into this strips which I cooked with the chicken. Like other reviewers, I combines the pasta in with the sauce for a bit as that's really the best way for the pasta to get very flavorful. Will make this again when I'm in the mood for a nice garlicky meal!

Cheesy Brat Stew for the Slow Cooker

I loved the idea of this. Left out the bell pepper and subbed cheddar cheese soup for the mushroom soup. Cooked this on low in my Dutch oven on the stove. Added a little extra cheddar cheese at the end. Overall very good and filling. The green beans should not be left out, they really add to this.

Amy's Tater Tot Casserole

this was a big hit. I used broccoli cheese soup (all i had in the house) and added a splash or two of white wine which really gave it a nice flavor. I did not include the yogurt or the onion soup mix as the soup was pretty flavorful on its own - just thinned it with milk and the little bit of wine. I halved the recipe as I was serving only 3 people and we ate the whole thing. (I still used the whole can of soup). I will make this again!

Rempel Family Meatloaf

This is the best meatloaf. I have subbed regular dried breadcrumbs for the crackers if I don't have them on hand. I've also covered this is bacon before putting in the oven. It's always moist and delicious (the onion soup mix is a must and gives this a really nice flavor). I also use a larger pan and just mold it into a loaf shape, leaving room between the loaf and the pan so that the fat has a place to go other than staying in the meat loaf. I have tried many meatloaf recipes from this site but this one is the best.
