Cream of Chicken and Gnocchi Soup

YES! This recipe is terrific. It's inexpensive, and luckily I already had most of the ingredients on hand. It's simple, which I love as well. Best of all, it's quick. I was able to put it together and serve it about a half hour later. I used a shredded rotisserie chicken which expedited the process as well. Love this! I will definitely be making it again.

Downeast Maine Pumpkin Bread

I wanted to review this for exactly what the recipe called for. It was pretty good; fairly uncomplicated, with a nice, mellow taste. This was my first time making pumpkin bread from scratch. It was my hope that it would go far and beyond the Libby's Pumpkin Bread Kit I usually buy this time of year. It really didn't, but it was still good. This made one loaf and a dozen muffins.

Grandpa's Peanut Butter Fudge

I'm not a big fan of fudge myself, so I made this for my girlfriend. She said it was delicious, but next time I will make it in a more shallow pan - it was waaayyy too rich to be so thick.

Vegetarian Mexican Inspired Stuffed Peppers

These were awesome! Not too spicy, but with just the right kick. Fairly simple to make, and cheap. They were a huge hit. My only complaint is the cheese didn't melt, rather, it got crunchy - although it's probably my fault for buying cheap cheese. Next time I'll by Sargento, like the recipe suggests. Overall, these were healthy, tasty and perfect for a week night.

Slow Cooker Pumpkin Steel Cut Oats

First, this makes a ton, so if you're the only one in your house who enjoys oatmeal (like me), I would recommend cutting the recipe in half. Secondly, I took the advice of the previous reviews and added 5 cups of water, as well as 1/2 a cup Splenda and 1 3/4 cup oatmeal. This turned out great. It is the perfect consistency, has a pleasing, not overpowering flavor and reheats well. Also, mine was done in 4 hours, not 6. I would definitely make it again.

Quinoa and Vegetable Soup

This soup was amazing. We are vegetarian, so I used vegetable stock instead of chicken stock. I was slightly worried it would affect the taste, but it was delicious. Instead of red kidney beans, I used white. I also added diced zucchini, as some of the other reviewers suggested. And because a lot of people said it was too "soupy", I doubled the quinoa. Next time I won't add as much, but over all everyone was REALLY pleased, and I will for sure be making this again.

Fudge

YUM! This recipe was so incredibly simple and turned out just fantastic! I used dark chocolate chips instead of semi-sweet...my first attempt at making fudge and I must say, it was a success!

Chocolate Chip Muffins

I made these last night; the other reviewers are right...they are pretty dry and crumbly. However they were easy and had a nice taste. I'm going to try to up the milk and oil, as suggested and see how they turn out. Overall, though, not bad.

Chocolate Pretzels

I learned to do these from my cousin a few years back and have made them dozens of times since. They are WONDERFUL! Everytime I'm invited to a gathering where there'll be food, people ask me to bring these. They're SUPER easy to make and the perfect combination of salty and sweet. My little brother and sister used to love helping me make these...they're a great kid's recipe.
