Yummy Lemon Salmon Burgers

Not a fan of canned salmon so I substituted 4 oz of lox instead by chopping it fine and adding it to the mix, FABULOUS!

Quick Szechwan Sauce

Great sauce for sauteed veggies and any meat/mushrooms. I added 2 Tbsp of soy sauce which added the perfect blend of salt to sweet, as well as a heaping tbsp of corn starch so the sauce thickens as it boils. Since I didn't have dried red chilies I used a tbsp of Rooster Sauce for a nice bit of heat. Just saute your meat and veggies, add some cooked rice noodles, and then add this sauce at the end and boil for a couple minutes and you've got a quick, healthy, delicious meal!

Quinoa and Black Beans

Delicious as written, but even more complex flavors noted when you add fresh lemon juice, chopped fresh tomatoes, etc.... Can be served hot or as a cold salad type of side dish.

Chicken Paprikash

I've been making my mother's traditional Hungarian Chicken Paprikas (with tomatoes, green peppers, and a hint of hungarian sausage) for years. My own family prefers this one - it is simple and delicious! I did need to add more chicken broth (instead of plain water) as it evaporated during the cooking process, I also added a small can (8oz) tomato sauce before adding the sour cream mix. This is a really quick meal if made with boxed dried Spaetzle (found in the pasta or ethnic foods grocery aisle) - not as good as homemade granted, but very tasty non-the-less when making dinner after a long work day. BTW - its gotta be real Hungarian Paprika!

Quick and easy to throw together, delicious with maple butter. Used cooking spray in muffin tin cups and on edges for easy removal. Only baked for 10 min. after turning the heat down to 350' - perfect popover resulted! Lower calorie and carb alternative to biscuits/rolls.

Gorgonzola Bread

I used Naan (indian flat bread) instead of Fr. bread. Saute the pears with sweet yellow onion slices in butter until limp. Then arrange on the flat bread with gorganzola-infused brie and sugar glazed walnuts (or pecans/almonds, etc). Amazing, especially with a nice wine!

Janet's Rich Banana Bread

Very Tasty bread. After reading over the other reviews I made the following revisions: room temp butter, 21/2 cups flour, bake at 325' for 75min. Instead of mashing bananas: freeze the bananas that are getting over ripe (in the peel). Then when you're ready to bake bread, simply defrost the bananas for approx 1 hour at room temp, snip off the end, and squeeze the pulp into the mixing bowl. I got this hint from a friend years ago, and it works great! The freezing process helps break down the banana and avoids needing to mash since once thawed again, it is mushy pulp.
