J.P.'s Big Daddy Biscuits

Reviewed: Mar. 1, 2014
Great biscuits! I've made them multiple times, and I always have great results. The last time I made them, I added some diced thick-cut bacon and fresh sage. After pan frying the bacon and sage, I let them cool, mixed them into the dry mix after cutting in the butter, then added the milk and continued from there. I thought they might be too salty with the full tsp of salt plus the bacon, so I cut it back to 1/2 tsp. I will use 3/4 tsp next time. After they came out of the oven, I brushed on a little bacon fat. Delicious!

Key Lime Pie VII

Reviewed: Sep. 1, 2011
Delicious! I used 1lb key limes, 2 300mL cans of sweetened condensed milk, and light sour cream. It was perfect! If I had used a third can of condensed milk there would have been far too much filling (I had a bit extra with two). EDIT: I've made this pie a few times now, and still love it! My manfriend thought that it was a bit too sweet, so I made a slight adjustment this last time. I used 2 cups of sweetened condensed milk and 1 cup of plain greek yogurt, and left everything else the same. We reached our perfect level of sweet :) There was some extra filling, so I put it into a ramekin and baked that along with the pie. Note: I've made this pie both with and without the zest, and the flavour is excellent either way. I prefer to add the zest for the aesthetics :)

Hot Artichoke and Spinach Dip II

Reviewed: Apr. 25, 2011
I left out the basil, replaced the mayo with sour cream as suggested by other reviewers, and added extra garlic and a splash of Worcestershire sauce.

Lentil Soup

Reviewed: Dec. 17, 2010
Somewhat plain. I doubled the recommended spices (including garlic) and I added cumin. The cumin was what made me decide this was worth making again.

A flavourful side dish that goes really well with steaks seasoned with seasoned salt, garlic, and thyme!

Broiled Tilapia Parmesan

Reviewed: Nov. 4, 2010
The sauce is delicious, although a little strong! Made it with halibut because I couldn't find tilapia and baked rather than broiled because of the thicker fish.

I added more egg yolks and had to bake the custard for about half an hour more than called for.

Butternut Squash Soup II

Reviewed: Nov. 4, 2010
Needs quite a bit of spicing up, but does taste good in the end. My boyfriend didn't enjoy the completely smooth texture, so next time I would puree only half of it and possibly add some shredded chicken.

Banana Crumb Muffins

Funny thing: I actually forgot to add the EGG and they still came out delicious! They were a little softer than they should have been, but everyone still loved them.

Honey Baked Chicken II

Reviewed: Sep. 8, 2010
Great recipe! My boyfriend and I can't get enough of this delicious chicken! I use two chicken breasts and reduce the sauce by half. We also double the curry powder because it pairs so well with the honey mustard mixture, and isn't very spicy at all. I give it five stars because I love it so much, and because everyone I serve it to loves it!

Boilermaker Tailgate Chili

Reviewed: Apr. 3, 2010
Delicious :) Made it in my slowcooker(halved the recipe; cooked 8 hours on low), so I had to change two things: I sauteed the veggies to get rid of some of the excess liquid, and I added an extra can of tomato paste to thicken it up further. I added more garlic, as I always do, and some mushrooms (because I couldn't imagine having chili without it). Other than that, I stuck to the recipe exactly and it was amazing!

Crispy Edamame

Reviewed: Mar. 16, 2010
These are yummy when they first come out of the oven. I wouldn't recommend refrigerating them for later, though. Unless they come out very crispy, they get soggy.
