I love to cook, I always have. My Nanny was the first person I remember cooking with. We would make cinnamon buns at the lake together for breakfast and I was always amazed that she could make things without recipes and they always turned out so good. I vividly remember sitting in front of the oven with her watching the meringue on her amazing lemon meringue pie so that it wouldn't burn. Now with my nieces I do the same thing and tell them the story of when I was a little girl and how I used to do the same thing. It's a great memory!
My favorite things to cook
I love to cook for my husband and make his favorites which is always some form of comfort food. He loves meatloaf especially, and chilli fries and things like that. Since I have lost 87 lbs in the recent months, I am having fun coming up with new low fat variations of his favorites, and for the most part he can't tell.
My favorite family cooking traditions
My family is Icelandic and I loved to go to the Icelandic festival and eat all the traditional foods. I have been able to re-create many of them. Christmas is a wonderful time for us and when I have children of my own I look forward to teaching them all that my Nanny taught me.
My cooking triumphs
I made vinetarta which is an Icelandic cake for my own wedding, and as involved as it is, it turned out great. My Nanny would have been proud.
My cooking tragedies
I've only made one truly awful thing, it was some sort of mexican dish. I followed the recipe exactly but we just didn't care for it at all. In fact, I had to make a brand new dinner since my husband and I could not eat it at all!!

Curried Coconut Chicken
I really enjoy this, it makes enough for leftovers to take for lunch the next day! I only change the amount of sugar by decreasing to 2 tblsp.

Slow Cooker Beef Stew I
I took the great base recipe, and tweaked it with a compilation of reviewer recommendations. The end result is a winner, to be sure. Here is what I did (and I won't change a thing the next time I make it): 1. Increase flour to 1/3 cup and substitute seasoned salt for regular salt. Put flour mixture into a zippered bag. Shake beef in bag to coat. Sauté coated beef in 1-2 tablespoons olive oil until browned. Add chopped onion to beef to sauté and soften. Transfer to slow cooker. 2. Mix beef broth with 1 TABLEspoon Worcestershire and ½ cup red wine. Pour into hot skillet to deglaze, then pour over beef and onions in cooker. 3. Add remaining ingredients with these additions: increase garlic to 2 cloves minced, 2 bay leaves; add 1 packet McCormick's Beef Stew Seasoning. Your home will smell wonderful all day, and your meal will be a savory feast! I served the stew in bowls, accompanied by slices of fresh, crusty bread.
