I will never buy chicken pot pie from the store again! This was amazing!!! I did make a few adjustments. Instead of adding water to the chicken mixture, I used low-sodium chicken broth and added a bouillon cube for more flavor. I thought it would be an absolute waste of incredible flavor, so when I drained the mixture, I made sure to reserve the liquid. I used this liquid to make the sauce, and added a few more bouillon cubes to get the right saltiness. For an easy crust that's still sort of "homemade", I used a boxed pie crust mix.
