Low Carb Jambalaya

Great recipe. Love Jambalaya, but with a diabetic in the house it hasn't been on the menu. Tried this today and we all loved it. Stayed pretty close to the recipe as listed. Was a bit overenthusiastic with the cajun seasoning, but it was still great. Changes for next time would be different colored peppers, and a yellow squash, just to liven up the colors a bit. Didn't miss the rice at all, but then I'm not from Louisiana.

Black-Eyed Pea Gumbo with shrimp and Andouille sausage

Very good! Stayed mainly with the recipe as written, except a poblano chile instead of bell and a little less celery. Raves all around will be making this again.

Scott Hibb's Amazing Whisky Grilled Baby Back Ribs

Wow. Hands down the best ribs I have ever made, and among the best I have ever had. Made the recipe as written for a first try, and the ribs were fantastic. Bunches of compliments to the chef for the ribs from all party goers. I'll add a little red pepper to half the sauce next time, just because I really like it that way. You can change the sauce, but the method of cooking the ribs is the best. 2.5 hours sit for 10 then on the grill. So tender and good. Great recipe

Microwave Baked Apples

Worked for me. Wide cut around the top of the apple, used a grapefruit spoon to dig out the rest of the seeds. sugar and cinnamon into the top of the apple, baked it 6 minutes. Added a drop or two of double Devon cream. Quick easy and Yummy

Simple Turkey Chili

Made a double batch. Turned out pretty spicy for us. Was able to tame it with extra beans and tomato sauce. Probably should have cut the cyanne after using chipotle chili powder.

Golden Sweet Cornbread

Very good recipe. I have made this cornbread for years. Only 1/3 cup of sugar though, and I like to use 1/2 cup white flour and 1/2 cup wheat flour. Gives it a nutty crunchy kind of flavor. Great Recipe.
