Best Tuna Melt (New Jersey Diner Style)
I needed a quick "fish" go to lunch since Lent just began here. I was reading through the reviews while eating the tuna melt and I gotta say as an experienced cook... this was simple and good and filling and quick. That's the type of meal it is. I substituted whole wheat for rye and cheddar for swiss (what I had on hand). If you're a garlic lover I would definitely add some minced for a nice extra pop. Don't forget the paprika, I think it added a nice taste. LOVED IT!! 5 stars!! Great quick go to.

Chicken Breasts Pierre
This recipe was AHH-Mazing. It's a keeper and a sleeper, meaning, that it is even better the next day. I followed the recipe exactly as written (I always try to the first time I make any dish). My only suggestions have been noted by many other reviewers: 1. DOUBLE the sauce and 2. No need to bread the chicken (a personal carb reduction preference). Served over rice, this was completely yummy!.

Pesto Spaghetti Squash
This recipe is a DEFINITE keeper. I followed the directions exactly, with the exception of not adding mushrooms (none on hand). It was delicious and had a kick level that my husband and I love. If you are not a spicy person, cut back the pepper by half. When I tasted the final dish, I realized that my squash was under cooked - not due to your directions - but because I made it the day before and had to shorten cook time to 45 min due to time restraints. To compensate for, the slightly too al dente texture of the squash, I added 1/2 to 3/4c of chicken stock and put back on the burner to simmer. This softened up the squash nicely, and gave me the opportunity to use up more of the kale that I had on hand. A great dish. I highly recommend.
