Perfect Pita Chips

I used to buy the "Naked" pita chips because my Dr told me to cut back on my salt intake, once you start eating that way everything seems to be so salty!!! I wanted to make my own pita chips to go with the home made roasted red pepper hummus....I used just a sprinkle of sea salt and parmesan cheese but no garlic. Yummy! Then I made a sweet treat for hubby and the kids using cinnamon sugar with a slight brush of butter, we use the to scoop vanilla ice cream....talk about happy campers!!! Thanks

Stir-Fry Spicy Green Beans

This was awesome..the flavors really mingled together...I wasn't sure about it but I had everything and the fresh tomato liquified with the soy and fish sauce. This would be good to use with a bunch of different veggies like yellow squash, zucchini, mushrooms, celery, water chestnuts, etc...I used a splash of sesame oil and a bit of chicken broth while cooking since the green beans do take a little longer to cook...sprinkled toasted sesame seeds on top when finished....Try it!!!

Nutty Apple Crisp

I used Mutsu apples, green, firm and tart but not sour. I substituted 3/4 cup organic apple juice for the water. I put the sliced apples, added 1/2 cup dried cranberries and the juice in a pot on low heat to release the apple juices while I prepared the rest of the ingredients. I used 1/2 cup organic cane sugar and followed the recipe but added 1 tsp of cinnamon to the nutmeg....So good!!!

Awesome and Easy Creamy Corn Casserole

My husband and kids LOVE corn so I thought I'd try this, I bumped it up a notch by adding half a finely minced red bell pepper, and a jalapeno out of the garden for a southwest flair. Before popping in the oven I sprinkled on some parmesan cheese and paprika over the top. Let me tell you this smells heavenly while baking, they were all begging for dinner! I served it with Sloppy Joes which is always a favorite. Next time I may add some sharp cheddar, we will enjoy this again soon - It was a hit!!!

Gramma Bertha's Banana Cake

This wonderfully scented hearty moist cake bread was gone before it was cool, I have used 3 or 4 bananas. I added a tablespoon of vanilla, a dash of cinnamon and a bit of ginger, I used 1 cup brown sugar so it isn't as sweet. I used plain yogurt instead of sour cream. I substituted a half cup of virgin coconut oil for the butter. I use 1 cup unbleached all purpose flour and 1 cup organic coconut flour. I have made this many times tweaking it as I go, I love nuts so I use either walnuts or pecans, either are wonderful. Can add 2 tbsp ground flax as part of the flour. I bake it 45-50 minutes and check with a toothpick, It was perfect spread with soft butter as the "frosting" My family loves this recipe as muffins or 9 x 13 cake pan size. A holiday favorite for gift giving is mini loafs, I wrap up gift baskets with banana nut loaf, cranberry orange loaf, brownies and cookies to give as gifts along with a box of Celestial Seasonings teas.

Boudreaux's Zydeco Stomp Gumbo

Fantastic! (10 stars after my tinkering) Born in Dallas, but now living up here in lovely South Carolina I miss good Texas BBQ, good Mexican food, and good Cajun Gumbo. I used Lupe's as my base recipe. I used onion, celery, red and green bell pepper, garlic, some fresh tomato, and a can of crushed tomatoes for the veggies. Used chic broth, used 2lbs shrimp, 3 chic breasts, and my major change was 5 sweet Italian sausage links cut up and pan fried instead of the smoked sausage - Please don't shoot me but I like the Italian sausage SO MUCH BETTER! I also added half a bag of frozen raw okra to the end when I put the shrimp in. My husband stomped his feet and said I might as well slap him because it was so good!!! I was very proud of myself for taking the time to make a perfect roux, it does take about 35 min. I also used the Zatarains Creole seasoning. I will add the fresh parsley next time. Honestly I've been to Louisiana and had authentic Gumbo, and this is awesome. Our favorite meal. Thank You Lupe Boudreaux

Creamy Au Gratin Potatoes

Hubby and teenagers LOVED IT!!! I used 2 cans evaporated milk, dried thyme, parsley, and paprika in the sauce along with some sour cream and half stick of melted butter. I let dish bake for 45 min then removed foil and put sharp white cheddar slices on top to finish baking.

One Two Three Sausage Balls

Perfect for the Thanksgiving and Christmas holidays! Little kids and big kids (husbands) love these, they'd be great for a superbowl party too! Better double this because they go fast.......

Pecan Pie VII

This was really easy but taste wise I guess I'd rather have the pecan pie made with the corn syrup because the texture of the filling. But don't get me wrong this was very tasty and none was left behind.

Thai Ginger Soup

Light fresh tasting appetizer soup, I used some leftover roasted chicken so it was super easy! Added a bit bit more fish sauce and a touch of red rooster chili garlic sauce for heat.......as you sip the flavors become more complex, so as you reach the end you are very satisfied but not full and ready for the next course.....Lovely

Key West Chicken

I was craving a Tequila Lime grilled chicken, I used this recipe as my base and added several spoonsfull of Jose Gold tequila, 3 limes, teriyaki instead of the soy sauce. The garlic smelled so good, the honey was lovely and the margaritas we all enjoyed while the chicken grilled made for a blissful Carolina evening. Of course it would also have been nice to be down in Key West with my toes in the sand! We'll make this again for sure!
