About this Cook
Make good use of my food sealer, freezer, and pressure canner to buy fresh fruits, veggies, and meats on sale. Enjoy going to our local farmers market in Charlotte.
My favorite things to cook
We cook everything from scratch, I like healthy food without mystery additives or too much fat and salt. I am learning how to cook and eat low glycemic for health. I LOVE and crave Thai food!!!
My favorite family cooking traditions
Holiday meals, gift baskets, baking breads and cookies.
My cooking triumphs
Learning about the spices, teas, and foods at the Asian market. Making home made salsa and pasta sauce! Baking sourdough bread and keeping the "starter" going.
My cooking tragedies
Left the giblet bag inside the turkey once, the whole meal was perfect EXCEPT the turkey!

Nutty Apple Crisp
I used Mutsu apples, green, firm and tart but not sour. I substituted 3/4 cup organic apple juice for the water. I put the sliced apples, added 1/2 cup dried cranberries and the juice in a pot on low heat to release the apple juices while I prepared the rest of the ingredients. I used 1/2 cup organic cane sugar and followed the recipe but added 1 tsp of cinnamon to the nutmeg....So good!!!

Stir-Fry Spicy Green Beans
This was awesome..the flavors really mingled together...I wasn't sure about it but I had everything and the fresh tomato liquified with the soy and fish sauce. This would be good to use with a bunch of different veggies like yellow squash, zucchini, mushrooms, celery, water chestnuts, etc...I used a splash of sesame oil and a bit of chicken broth while cooking since the green beans do take a little longer to cook...sprinkled toasted sesame seeds on top when finished....Try it!!!

Perfect Pita Chips
I used to buy the "Naked" pita chips because my Dr told me to cut back on my salt intake, once you start eating that way everything seems to be so salty!!! I wanted to make my own pita chips to go with the home made roasted red pepper hummus....I used just a sprinkle of sea salt and parmesan cheese but no garlic. Yummy! Then I made a sweet treat for hubby and the kids using cinnamon sugar with a slight brush of butter, we use the to scoop vanilla ice cream....talk about happy campers!!! Thanks
