Irish Cream Bundt Cake

Campbell's Kitchen Creamy Vegetable Medley

Perfect Side Dish. Very fast and simple, yet really good. I doubled the veggies and used 1 can of FF Cream of Celery and 1 can of regular with 1 cup of milk and pepper to taste. Also, uncovered for the last few minutes to thicken the sauce a little. Everyone enjoyed this and we will make it again.

Romaine and Mandarin Orange Salad with Poppy Seed Dressing

Excellent Salad! Very refreshing and a great addition to our Father's Day menu this year. Followed the recipe with the exception of using a couple of small shallots, diced very small in place of the red onion. I don't care for a strong onion flavor, so I didn't add them to the blender with the other ingredients. I stirred them into the finished dressing right before service. Worked great. We would be very happy to make this again. Thanks for sharing!

Ocean Packets

This is delicious. We use this method to prepare fish often. Hubby mentioned he would like grilled shrimp and scallops and I remembered seeing this recipe. Since we enjoy the fish so much I knew we would love this as well. Very clean, straight forward flavor from the seafood and lemon-butter. Perfect light meal for the upcoming hot evenings. The only changes we made were that we used less of each type of seafood in each serving, didn't really count the number of shrimp or mussels (used in place of clams), only placed 3 large sea scallops in each packet and 2 small pieces of corn in each. Also drizzled approx 2 Tbsp of white wine over everything before closing each. Super fast and easy with excellent results. This will be a regular weeknight dinner as well as served to impress company here this summer. Thanks for sharing!

best mocha drink, EVER!

YUM! We just realized we are out of regular coffee this morning. DH was on his way out the door to the store when I remembered saving this recipe. I am so glad I did! This is delicious. Absolutely perfect. This will be enjoyed often. Thanks for sharing, geranium!!

Raspberry Buttercream Frosting

Needed enough frosting for 12 cupcakes, so I made half of the recipe. I was also looking for a raspberry buttercream so I replaced the milk with approx. 1/2 cup of fresh raspberries. I mixed the butter and raspberries, added the vanilla and then added 1 cup of confectioners' sugar at a time and beat well after each addition until I was happy with the consistency. Worked out great! I will use this recipe often. Thanks for sharing!

Mango-Peach Smoothie

Yum! We really enjoyed this. Very refreshing. I used frozen, unsweetened peaches and a dash of vanilla extract (only had regular soy milk). My mango wasn't as ripe as I would have liked so also added the smallest touch of honey. Hubby said he would enjoy this on his way to work in the morning. Will be making again tomorrow morning Thanks for sharing!

Cherry Tomato Corn Salad

First time preparing a corn salad and we loved it. Refreshing, light side that would go well with so many main dishes. So fast and easy it would be great for a weeknight, BBQ or Potluck, or a light lunch. We will be enjoying this often. Thanks for sharing!

Shrimp Lemon Pepper Linguini

This is excellent! I can't say enough about this recipe. It is that good. I was feeding 8 last night so I doubled the recipe and added 1/2 pound of chicken tenders cut into small strips (for the 1 picky, I don't eat shrimp, son). After tasting the sauce, I decided to triple the chicken stock and proceed with reducing it. This was perfect for our taste. Everyone just raved. This will be a frequent dinner around here. Thanks for sharing!

Neptune's Favorite Crab Bisque

Wow! Pleasantly surprised with this one! I will admit I was a little nervous because I was using lump crab meat and fresh shrimp but needed something very quick and easy so I decided to give it a try. My entire family is sooo happy I did! I added a couple of things to this to make it go a little further (needed to feed 7) and it really worked out great. I added a can of low sodium cream of potato soup, and a 1/2 pound shrimp (just added the shrimp with the crab and followed directions.) To compensate for the extra soup, I added 1/2 cup milk and 1/2 cup heavy cream (used in place of light cream). I also followed other reviews and backed down on the wine. I used approx. 3/4 cup and it was perfect for us. Sprinkled a little Old Bay Seasoning and green onions right before serving and everyone raved & asked for seconds. This will be a regular here. Strawberry Cream Pie

Super easy, fast and great taste. I cheated and used a store bought oreo crust. I also added approx. 1/4 cup chopped strawberries to the mix because it just didn't look like enough to fill the crust. Everyone really enjoyed this and I'm sure I will make it again. Thanks for sharing!

Death by Chocolate Mousse

Springtime Strawberry Bars

Made these for the Recipe Group this week. These are very good! The whole family enjoyed them and gave a thumbs-up across the board. I couldn't find my 15x10 pan so went with a 13x9. This worked out perfect and I would hesitate to use the larger pan in the future because it seems that there would not be enough preserves to cover the base. It was the perfect amount using a 13x9. I coarsly chopped the almonds by hand and we really like the slightly crunchy texture. Used the zest from one lemon (didn't measure the 1 teaspoon). The little citrus hit in the dough is really nice. The recipe asks that you mix the dough until it resembles coarse crumbs. My dough never had that crumbly texture. It was more like a soft cookie dough that spread easily in the pan. The bake time in my oven in a 13x9 was about 27 minutes. Quick and easy recipe with great flavor and texture. We will definitely enjoy these again. Thanks for sharing!

Baked Teriyaki Chicken

Excellent. We all loved this. Hubby and kids all agreed that this should be made often. We have a large dinner here every Sunday for the entire family and hubs suggested that this be remembered for one of those huge, special meals. That is fine with me, as this is soooo easy and absolutely delicious. I doubled the sauce, used BLSL chicken breasts, 3/4 cup brown sugar, 1/4 cup white sugar, rice vinegar instead of cider and grated fresh ginger in place of the ground. Perfect. Thanks for sharing!!

Pineapple Upside-Down Cake V

This is an excellent recipe! My dad requested a Pineapple Upside Down Cake for his 67th birthday today and this is the one that I chose to make. He was blown away! He said it was the best Upside Down Cake he had ever had (and believe me, at 67, he doesn't compliment much anymore unless it is earned :)~ We loved the addition of the coconut. I was surprised at how pretty it looked as a double layer cake. I did have a very slight sticking problem with the bottom layer's pineapple but it was really easy to just place a couple of small areas back on and it will never be noticed. I only waited about 10 min before turning the cakes out of the pans. I am really looking forward to the next request for this cake. It is delicious. Thanks for sharing!

Creamy Lemon Pie

We really enjoyed this pie. Perfect tart/sweet combo. Using freshly squeezed lemon juice is a must. I also added the zest from 1/2 lemon. This recipe is also on the Eagle Brand site, with an added layer of raspberries. Very easy (10 oz bag of thawed raspberries and cornstarch; heated until thick and clear and then poured on top of the cooked lemon layer.) Hubby loves raspberries so I added it. I added approx. 1/8 cup sugar to the raspberries. Perfect. We will enjoy this again soon.

Pear Crumb Pie

We really enjoyed this pie. Hubby commented several times that he loved that it wasn't overly sweet. Followed the recipe with the exception of throwing in a handful of fresh raspberries that needed to be used up and a little extra cornstarch (my pears were very ripe). I will make this one again.
