Angela's Awesome Enchiladas

Everyone really enjoyed this. Hubby said he could eat these once a week. I used chicken stock instead of water and left out the olives (none of the kids will eat them). Very easy with great results.

Excellent! Followed suggestion of 2 cups Whipping Cream with a little powdered sugar and vanilla. Everyone loved it. It really does melt in your mouth. Light and refreshing. We will enjoy this during the warmer months and maybe change it up with orange or lime next time.

Chocolate Covered Strawberries

This was perfect! We also melted a small amount of white chocolate and used a fork to quickly drizzle over the dark chocolate. They were very pretty and everyone really enjoyed them.

Whipped Shortbread Cookies

Excellent! As others suggested, beat the butter by itself for 5 minutes, add sugar, beat 10 minutes, add flour in thirds and beat 2 min after first and second addition and then approx. 8 minutes after last addition. Baked for 14 min and they were perfect. Melt in your mouth, delicate cookies. Everyone loved them.

Cinnamon Pie

This was very good and everyone in my family enjoyed it. I did not have to bake this as long, maybe because I used a tad more flour. Also added approx. 1/2 teaspoon more cinnamon and thought that was perfect. Per other reviews/suggestions, I used the Buttery Crunch Crust and this worked out very well. I will make this again, probably closer to Thanksgiving/Christmas. Thanks for sharing!

Slow-Cooker Corned Beef and Cabbage

Excellent Recipe! We didn't use beer, but did use Low Sodium Beef Stock in place of water. Started the Corned Beef with Seasoning Packet on Low at 9:00 this morning, added the potatoes, carrots and onions at 2:00 and added cabbage at 4:00. Sat down to eat an absolute wonderful meal at 6:15. Meat was extremely tender and vegetables were perfect. This is the only way we will ever prepare this meal. Thanks for sharing!

Luck o' the Irish Brownie

I did cheat and used a Duncan Hines Fudge Browning Mix. This was really, really good. The peppermint flavor was right on and it was a perfect balance with the chocolate for us. Will make it every year for St. Patrick's Day. Thanks for sharing!

No Sour Cream Beef Stroganoff

Everyone enjoyed this. I did change things a little...I sauted the onion in a little butter and olive oil until tender, and then added the mushrooms (I used fresh - 1/2 sliced white button and 1/2 sliced baby bellas) and sauted those until all moisture was gone and then added the minced garlic and sauted for 2 minutes. I then deglazed with the white wine and allowed to simmer until the pan was almost dry. This mixture was removed from the pan and set aside and the ground beef was added to the pan and browned. Then the mushroom mixture added back in. I mixed the flour with 1/2 cup of beef stock and added that to the skillet and then 2 cans of mushroom soup and 1.5 the amount of beef broth (I used stock) called for in the recipe and a splash of Worcestershire. (Also seasoned with Salt and Pepper along the way). Allowed this to simmer for approx. 10 - 15 min and served over wide egg noddles. Very tasty weenight dinner.

This is a great lemon bar! After reading the reviews I decided to 1 1/2 the crust ingredients. Also upped the fresh lemon juice to 1/3 cup and added 1 teaspoon lemon zest. Perfect! Thanks for sharing.

Blood Orange and Pineapple Muffins

We LOVED These!!! I purchased Moro Oranges that did not have the complete dark blood red color when I cut them open but did have streaks of that color throughout. They were sweet and paired with the pineapple, the taste is perfect! These will be a regular in our home. Thank you for sharing this great recipe.

Five Flavor Pound Cake I

Hands Down the best pound cake I have ever made. Per other reviews/suggestions, I creamed the butter, shortening and sugar for 4 min and beat 1 min after adding each egg. I also used lemon, orange, coconut, almond and vanilla extracts. The density and flavor were perfect. This will be my new go to recipe for all types of occassions. Thank you for sharing!

Cherry Berries on a Cloud

This was sooooo good! Everyone loved it and several people asked for the recipe. It looks like it may be time consuming but I just put the meringue in the oven in the evening for one hour, turned the oven off and forgot about it until the next morning. I took it out, spent about 5 minutes whipping up the cream cheese & whipped cream layer and chilled until serving time. Spent 1 minute stirring pie filling, sliced strawberries and lemon juice and...smiling faces all around. This is so light and airy it could be served during warmer months as well as after a heavy meal during the Holidays. I may cut back slightly on the sugar in the meringue next time but is also great as written. Thank you for sharing!

Incredibly Easy Chicken and Noodles

This was really, really good and so easy! We used low sodium/healthy request soups and low sodium stock and added 1 low sodium chicken cube. Everyone loved it and this will be a regular in our home. Thanks for sharing!

Mexican-Style Goulash

This is a great one-pot weeknight meal! Sauteed the onion in a small amt of olive oil and then added approx. 1.5 lb very lean ground beef (no need to drain.) Added 1 can Zesty Mexican Diced Tomatoes and 1 can Plain Diced Tomatoes, the Tomato Sauce and Low Sodium Beef Stock instead of water. Also added 1 teaspoon Cumin, 1/2 teaspoon Corriander and a pinch of sugar with the Oregano. Upped the Chili Powder to 2 teaspoons and Pasta to 2 Cups. Uncovered for the last 5 minutes to thicken slightly. Sprinkled Mexican Blend Shredded Cheese on top. Everyone loved it. Husband said "Add this to the rotation." Thanks for Sharing!

Brown Sugar Banana Nut Bread I

This is a very good Banana Bread recipe. It is moist and flavorful but I feel it is missing something, but not sure what that is. I usually use a recipe from a well known bakery in Boston and it has 2 TBS. sour cream. I am going to try this recipe again and add the sour cream and see if it brightens this up just a bit. The family did enjoy this with coffee this morning. Thanks for sharing!

Italian Easter Cookies

We love these cookies! Rolled them and then just lightly flattened them and they were perfect. The cooking time is right on. I did up the almond extract to 1 1/2 teaspoons in both the dough and icing. Tinted the frosting and sprinkled with colored sugar. Please note that the dough is not very sweet, but the icing is! Very pretty addition to our Easter table. Thanks for sharing!
