Chocolate Crinkles II

Reviewed: Sep. 25, 2010
Excellent cookie! We really liked the more intense chocolate flavor of Ghirardelli Cocoa in the past so that is what I used in these. Followed the recipe and the result is a deep, dark, moist, very chocolate cookie. Remember to allow at least 4 hours in the fridge for the correct shape and texture. These are going on the holiday baking list. Thanks for sharing!

Campbell's® Easy Chicken and Cheese Enchiladas

Reviewed: Sep. 25, 2010
What a great weeknight recipe. Used store bought Rotisserie Chicken and this was on the table in no time. Fast, easy and tasty. I did add a little more Chili Powder and cheese. Hubby and kids enjoyed this.

Italian Bread Wedges

Reviewed: Sep. 21, 2010
The whole family loves this bread! This is sooo easy but the results are delicious. I used 1/4 cup of the italian dressing and that was enough for us. The amount of spices and cheese are perfect. This was gone so fast, I may have to think about doubling the recipe next time. Thanks for sharing!

Spiced Pear Bread

Reviewed: Sep. 21, 2010
Great Recipe! Followed exactly. I didn't mash the pears to a mushy consistancy. I left small pieces that were evenly distributed throughout the bread and didn't have the problem that others mentioned about not being able to taste the pear. It was very evident this was pear bread. The spices are perfect for us as well. Not overly spiced - just right. I was very happy with the consistancy. There is not too much liquid added so you don't end up with a really dense, seemingly undercooked product. We love this bread! Thanks for sharing!

Country Apple Dumplings

Reviewed: Sep. 16, 2010
Oh My Goodness these are good! It is very hard to eat just one. My daughter just came in the room and asked me to hide them. She couldn't believe she just finished her 3rd dumpling. Followed the recipe with the exception of using 1 cup white sugar and 1/2 cup brown sugar and cooked the sugar/butter mixture for a few minutes until it thickened up a little. Also, poured the Mountain Dew around the dumplings instead of over them. This worked out well, giving the tops a chance to carmalize a little in the oven. This is a great recipe that we will enjoy often. Thanks for sharing!

Crispy Chicken Strips

Reviewed: Sep. 16, 2010
Excellent Chicken Strips! Everyone loved them. I am out of seasoned bread crumbs so I used Panko and added kosher salt, pepper, garlic powder, Italian seasoning and chopped fresh parsley. I also used 2 eggs (I doubled the recipe) in place of the egg substitute. These changes worked out perfectly. This is a super fast, super easy weeknight dish to throw together with excellent results. Very tender, juicy chicken that has a flavorful, crunchy breading. We will use this often. Thanks for sharing!

Macaroni and Cheese with Caramelized Onions and Bacon

Reviewed: Sep. 16, 2010
We were in need of serious comfort food tonight and I remembered this recipe. This is the ultimate mac and cheese! We absolutely loved it. Asiago is one of our favorites. Pair it up with the sharp white cheddar I used, and it was a perfect match. I cut this down to 4 servings and it still easily fed 6 - 7 people. It does take a little longer to prepare than most mac and cheese recipes but it sooo worth it. I'm thinking this needs to be on one of the menus coming up for the holidays. This is definately our favorite mac and cheese now. Thanks for sharing!

Chocolate-Chocolate Chip Bacon Cookies

Reviewed: Sep. 15, 2010
I halved the recipe in case we didn't care for them. I wish I would have gone ahead and made the whole batch. These are delicious. Addicting sweet/savory, perfect little cookies. My first batch spread a little more than I like so I just put the batter in the fridge for about and hour and used a small ice cream scoop and they turned out great. Used regular bacon (I don't care for maple flavor) and chopped the bacon so you could still see it and taste it. We will definately make these again. Thanks for sharing!

Creamy Chicken and Wild Rice Soup

Reviewed: Sep. 15, 2010
Excellent Recipe! Everyone loved it here. I use all low sodium chicken stock (no water) and a regular box of Uncle Bens long grain and wild rice. I cooked the rice in water (use seasoning packet as it is called for in this recipe with the butter) until done and then proceeded as written. Worked out great. We will make this again. Thanks for sharing!

Grilled Lamb with Brown Sugar Glaze

Reviewed: Sep. 12, 2010
Wow! That's the word I heard over and over at the table this evening. Everyone loved these. We don't serve Lamb often (not sure why) but we will now. Every single person cleaned their plates and had very nice comments about this recipe. The young children enjoyed these as much as the adults. There was no fussing with them to "finish your dinner" :) I'm sure this is the recipe we will turn to when lamb is on the menu the next time. Thanks for sharing!

Green Bean Casserole Remix

Reviewed: Sep. 12, 2010
This was gone in no time this evening. Everyone (adults, teens and kids) loved it and asked that we have it again for Thanksgiving in place of the traditional this year. I was sure I had half and half cream but when I reached in the fridge, all I could find was heavy cream so used that. I also used a very tiny amount of a cornstarch slurry to thicken a little more. Also, couldn't resist adding Durkee Onions on top. Delicious. Thanks for sharing!

Raspberry Cream Cheese Coffee Cake

Reviewed: Sep. 12, 2010
Followed the recipe and this is good but I will make a couple of changes next time. There was a little too much filling for us and the filling was too sweet. The cake was a tad dry. A couple of people mentioned that it reminded them more of a cheesecake type of dessert than a coffee cake. The raspberry/almond flavor is excellent and I will try again with some small tweaks. Thanks for sharing!

Bacon-Egg English Muffin

Reviewed: Sep. 12, 2010
Husband and kids went crazy over these. A couple of the kids said they are better than McDonalds! :) Hubby refused to try the Cream Cheese and that set off the "no cream cheese for me either please" requests so that was left out. We used Kraft White American Cheese Slices and the "English Muffins" recipe from this site and they were perfect. These have already been requested for next Sunday morning. Thanks for sharing!

English Muffins

Reviewed: Sep. 12, 2010
Excellent Recipe! My first "from scratch" yeast recipe and it was so easy and the finished product is delicious. I did end up baking these @ 350 for approx. 8 min on the first side and 7 min on the second. I attempted to use an electric griddle (only griddle I have) and the one I have is too hard to regulate the temp and I burned the first couple of muffins. Baking worked out perfectly. I will make these often. Thanks for sharing!

Reuben Sandwich II

Reviewed: Sep. 12, 2010
We really like these. Followed the recipe using a rye/pumpernickel swirl bread and a stove top grill pan instead of broiler. This worked out great and we will make them again. Thanks for sharing!

Uglies

Reviewed: Sep. 9, 2010
Everyone really liked these. I did change this to use up what I had on hand this evening. We had leftover bbq baby-back ribs that I had pulled the meat from the bone. Used that in place of the the ground beef and it worked out great. I heated the meat in a little bbq sauce, and followed the recipe from there. Served these with a salad for a quick, easy dinner. Hubby and sons have requested them again during football season. Thanks for sharing!

Creamy Italian Dressing I

Reviewed: Sep. 9, 2010
Hubby asked me to try to find a Creamy Italian Dressing like the one Pizza Hut served years ago. I put a request on the RE and "K-Dub" suggested this recipe. It was perfect! Hubs said this dressing isn't exactly the same...but it's better. He declared it one of the best salads he's ever had. I followed the recipe with the exception of using White Wine Vinegar in place of the red (what I had on hand). All of the ingredients just go together perfectly. Thank you K-Dub for your help and thanks Cathy, for sharing!

My Mom's Good Old Potato Salad

Reviewed: Sep. 7, 2010
Almost the exact recipe my Grandma taught my Mom over 50 years ago and then she passed it on to me. The only changes are use approx. 1/2 jar sweet pickles and a small amount of the pickle juice (to taste), add a little chopped celery and salt and pepper to taste. This is the only way my family really likes potato salad and this recipe will be passed on to my kids. Thanks for sharing!

S'mores Crumb Bars

Reviewed: Sep. 7, 2010
Super fast and easy and taste great! Next time I will either use a smaller pan (9x9) or make more of the crumb mixture. Mine turned out very thin and hard to keep together when cutting. Everyone really enjoyed them so I will try again with a couple of small adjustments. Thanks for sharing!
