Butterscotch Cake II

Reviewed: Oct. 12, 2010
Used a butter flavored cake mix and followed another reviewer and used 1/4 cup of Butterscotch Schnapps for an equal portion of the milk. Flavor was great, definately butterscotch. Thanks for sharing!

Harvest Pumpkin Brownies

Reviewed: Oct. 1, 2010
Brownies, Cake, Bar, etc.. Whatever you call this, it is a wonderful recipe! Perfectly spiced, allowing the pumpkin to shine. Moist, but not heavy or dense and rich, but not overly sweet. Just perfect as written. I don't have a 15"x10"x1" but did find a 15.25" x 10.25x .75" and used that plus I got 24 mini cupcakes. I doubled the frosting, using 8 oz of cream cheese instead of 6 oz (just to use the entire package) and it is a perfect match. Again, not overly sweet. Kids and hubby all loved these and we will enjoy them often this fall and over the Holidays. Thanks for sharing!!

Italian Sausage, Peppers, and Onions

Reviewed: Oct. 1, 2010
Delicious. We loved it. Followed the author's advice and used half sweet and half hot Italian Sausage and it was excellent. I also used a mix of green, red, orange and yellow bell peppers (pers pref) and vidalia in place of the yellow onion. We all loved the addition of the basil and oregano and thought the amount of these herbs was perfect. My son put his on Italian Bread and my daughter and I ate it as is. Excellent dinner. Thanks for sharing!

Macaroni And Cheese II

Reviewed: Oct. 1, 2010
It was just two kids and myself this evening and I was originally looking for a stove-top mac and cheese (without Velveeta) to quickly throw together when I came across this recipe. This is very easy and super fast with pretty good results. I added approx. 6 oz. freshly grated sharp white cheddar cheese and left out the bread crumbs and didn't bake it. Just cooked and drained the pasta, mixed the sauce (plus the cheddar cheese) poured it over the pasta, stirred and left it on low for a few min while finishing up the rest of the meal. Worked out great. I also added lots of black pepper and a little dry mustard right before serving. I would use this again for a very fast, easy side when we are craving mac and cheese and I don't have any of the blue box mac and cheese in the house. Thanks for sharing.

Oatmeal Chip Cookies

Reviewed: Oct. 1, 2010
Made these for one of the grandkids to take to school at the last minute. Very easy recipe that resulted in a delicious cookie! Lightly crunchy outside, nice and chewy inside and excellent flavor. Followed the recipe except copied Naples34102 review and substituted fall colored M&Ms for the chips. This worked out great. Thanks for sharing!

Harvest Pumpkin Cupcakes

Reviewed: Sep. 28, 2010
I made these for Recipe Group and they are Outstanding!! This is the best Pumpkin Spice Cake and the icing is to die for. Definately one of our favorite pumpkin recipes that we have ever tried. The cake is moist, tender, perfectly spiced, not overly sweet and best of all - you can really taste the pumpkin. The spices and sweetness do not overpower the pumpkin flavor. The orange buttercream is delicious and is a perfect match. I followed the recipe with the exception of using reg Pure Vanilla Extract (not the 100% Pure Bourbon Vanilla) and would not change a thing. This recipe will be used often, not only during the fall/Holidays, but all year. Our new favorite. Thanks for sharing!

Double Quick Dinner Rolls

Reviewed: Sep. 28, 2010
Hubby requested a "plain" yeast dinner roll to have with soup this evening and I am happy to have found this recipe. Very quick, very easy and exactly what we were looking for. Because we wanted a plain flavor bread, I omitted the onion powder. I also proofed the yeast with the sugar for 10 min. and then continued on with the recipe as written. The result was a nice light textured, lightly flavored roll that could be served for dinner, breakfast with butter/jelly or lunch, used as a small sandwich roll. As another reviewer mentioned, you almost expect a muffin texture because of the shape but are pleasantly surprised by the soft, yeasty roll. I know I will use this recipe often. Thanks for sharing!

Peppery Cheddar Muffins

Reviewed: Sep. 27, 2010
Followed the recipe with the exception of adding in a little more cheese than called for. The tender texture of these muffins is excellent. The next time I make these, I will go with other reviews and add garlic powder, onion powder, more salt, etc... They are a little bland as written. Hubby and kids said they liked them but wished they had a little more flavor. We did enjoy trying the recipe and will make them again with some added spices. Thanks for sharing!

Bread Pudding II

Reviewed: Sep. 27, 2010
This is a wonderful Bread Pudding! Everyone that tried it loved it and my MIL asked for the recipe (never happens!). I followed other review and used Pepperidge Farm Cinnamon Swirl Bread. I'm not sure if I purchased the correct bread because the slices were thin and using only 6 slices with 4 eggs and 2 cups of milk was just not enough bread. I used nine slices and I will do the same next time except back the eggs down to 3. It was just a little too eggy for me. I included the raisins and thought it a great addition. The amount of cinnamon and vanilla were perfect for us. I will make this often with the little tweaks mentioned. Thanks for sharing!

Hearty Hamburger Soup

Reviewed: Sep. 25, 2010
My family really, really liked this soup. We prefer a heartier soup so I added more veggies, barley, and a couple potatoes. I was a little nervous when I first tasted the broth, about 30 min into the simmering. It was a tad bland. After reading a few reviews, I added a little garlic powder, onion powder and more salt (I used Low Sodium Beef Stock) and pepper and covered it back up and waited to taste it again after 1.5 hours. Perfect! All the flavors had had a chance to develop and it was delicious. This will be on the menu this fall and winter. Thanks for sharing!

Classic Chicken Noodle Soup

Reviewed: Sep. 25, 2010
Perfect Chicken Noodle Soup every time. I follow the recipe, leaving out the peas (personal pref) and adding a little more veggies and egg noodles, as we like a heartier soup. The Rotisserie Chicken gives the Fast Chicken Soup Base more depth of flavor than other recipes we have tried. Everyone (including my 1.5 year old granddaughter) loves this and it is requested whenever soup is mentioned as part of the weekly menu.

Classic Waffles

Reviewed: Sep. 25, 2010
Excellent. Perfect every time. I follow the recipe and always end up with delicious waffles, a little crunchy on the outside and slightly fluffy, tender inside. The vanilla and butter make these more flavorful than most recipe I have tried and always come back to this one, as this is my family's favorite. Thanks for sharing!

French Bread Rolls to Die For

Reviewed: Sep. 25, 2010
OMGosh! The family went nuts over these rolls. Honestly, this is such an easy recipe and the results were delicious and turned out exactly as I had hoped. This is only the third "from scratch" homemade bread I have ever attempted to make and I can tell you, they are to "die for" as far as my family is concerned. The texture and flavor is wonderful. Crusty outside and light, fluffy but slightly "chewy" inside. Exactly what they asked me to learn to make. I have made them twice this week and they are asking me to make them again tomorrow for Sunday dinner. No problem! I would love to. Thanks for sharing and making my family very happy! :)

Baked Scallops

Reviewed: Sep. 25, 2010
Followed the recipe, using Panko bread crumbs (for more texture) with chopped fresh parsley (for freshness and color) in the topping. Everyone enjoyed this and agreed that the lighter, fresher baked version are just as good, if not better than battered and fried. This is a very easy, fast, flavorful dish that is great for busy weeknights and would also be perfect for company or special occassions. Thanks for sharing!

Pumpkin Chocolate Chip Cookies III

Reviewed: Sep. 25, 2010
These were good but lacked a little in pumpkin flavor for us. The spice amount is pleasant, not overpowering, but there just isn't a lot of pumpkin flavor. Followed the recipe, leaving out the optional walnuts and used Ghirardelli Semisweet Chips. This is the only time I can remember thinking that next time I will use a milder chocolate and less of it. The amount (2 cups) and more intense chocolate flavor of these chips overpowered the other flavors and just added to the want of more pumpkin. We did enjoy the soft, cake like consistancy and would love to try these again with some small tweaks. Thanks for sharing!

Tropical Coffee Cake

Reviewed: Sep. 25, 2010
One of our favorite Coffee Cake Recipes. This is perfect as written. Followed the recipe, only changing the pan to a 9" round springform. Worked out great. Perfect texture and flavors. Baking time was spot on in my oven. This will be enjoyed often. Thanks for sharing this great recipe!

Exchange Gang Pasta with Shrimp

Reviewed: Sep. 25, 2010
Wow Keri! This is delicious! Everyone loved it and made a point of mentioning that they would love to have it again soon. I followed the recipe except used sliced mushrooms (instead of diced), a mixture of Roma and Grape Tomatoes (to use up what I had on hand) and a little more half & half and Parm (to stretch the sauce to serve 6). The sauce is absolutely incredible. I usually cut the wine back a little in recipes but used the amount called for and it was perfect. I love the fresh, bright flavor the lemon juice gives this. My daughter's friend was here when we served this. She insisted on taking the recipe home with her when she left. Compliments all around. We will enjoy this often. Thanks so much for sharing!!

Quick Black Beans and Rice

Reviewed: Sep. 25, 2010
Hubby and kids liked this. This was a last minute addition to the menu and I didn't have Instant Brown Rice so I prepared White Long Grain in Low Sodium Chicken Stock in it's place. This worked out well. I felt it was a little bland so next time I will follow other reviews and add Cumin or other spices to brighten it up a little. We had this with Chicken Enchiladas and felt it went together very well. Thanks for sharing!

Fiesta Chopped Salad

Reviewed: Sep. 25, 2010
We love this salad. I have made it a couple of times over the last few months and it is always well received by everyone. I usually add a sweet orange pepper (for color and we like them) and use Roma or Plum Tomato. I also forgot to purchase Red Wine Vinegar and used White and it was perfect. We will continue to enjoy this often. Thanks for sharing!
