Lemon-Cranberry Mini Loaves

Reviewed: Oct. 21, 2010
Perfect sweet/tart flavor! This made exactly enough for 6 mini loaves. This is a very moist, tender, flavorful, pretty bread and I wouldn't hesitate to give them as gifts this holiday season. I did add a drizzle of confectioner's sugar and lemon juice after they cooled and everyone loved it. This will definately be a repeat. Thanks for sharing!

Pumpkin Brownies

Reviewed: Oct. 21, 2010
Excellent! We love these. Followed the recipe, using canned organic pumpkin, mini chocolate chips and baked them in mini muffin tins. I used a small ice-cream scoop and just layered the two mixtures (did not swirl). The bake time was approx 23 min in my oven. At 18 minutes, I sprinkled additional mini choc chips and chopped walnuts on top and returned to the oven for the last 5 minutes. Perfect, delicious little bites that definately taste like autumn. By not swirling the two batters together, I think the pumpkin flavor really came through. Perfectly spiced, moist, and slightly dense. We really enjoyed these and will make them again. Thanks for sharing!

Sensational Strawberry Shortcake

Reviewed: Oct. 21, 2010
This is a beautiful dessert and the taste is wonderful. It is easy and quick to prepare. Everyone agreed on those points but the "shortcake" is soooo dry that only 2 people out of 12 finished their serving (most only took 1 or 2 bites.) I followed the recipe except used two 8" pans instead of 9" after reading the reviews and some stating it was dry. I watched the cake very closely and they were done in approx. 30 min in my oven. The meringue layer is a different addition and very good and the sweetness and flavor is spot on. My husband requested this for his birthday cake so I was very disappointed that it turned out as dry as it did. I prepared this approx. 2 hours before service, following the submitter's note that it is best served the same day that it is prepared. I was serving to family and I always ask for their honest feedback. Everyone said that they would love for me to try this again because the flavor was excellent but I am hesitant. I really did enjoy trying this recipe and will keep it in mind for next spring/summer when strawberries are in season again. Thanks for sharing.

Filet Mignon with Bacon Cream Sauce

Reviewed: Oct. 21, 2010
Prepared beef tenderloin for a crowd but followed the original 4 servings for this sauce because we never serve anything on filets other than the salt, pepper, and seasonings put on the meat before grilling. I was in the mood for something a little different and chose this, thinking I would be the only one interested in trying it. I was wrong and should have tripled this! Everyone that tried it wanted it and I had to promise there would be enough for everyone next time. I followed the recipe except I had used my shallots in another side dish and only had Vidalia in the pantry. This worked out perfect in our opinion and I wouldn't hesitate to make it the same again. This sauce is delicious and the bacon goes perfectly with the tenderloin. Thanks for sharing!

Savory Green Beans

Reviewed: Oct. 21, 2010
Excellent! Simple and delicious. Followed the recipe except I used bacon in place of the pancetta. The slightly smoked bacon and caramelized shallots together with the fresh beans is perfect. Everyone commented that they would like to have this again. Thanks for sharing!

Plain Caramel Apples

Reviewed: Oct. 21, 2010
Followed the recipe and ended up with just enough caramel to cover 4 medium apples. I used a small sauce pan and the caramel was still not deep enough to "dip" the apples. The only way to to cover them was to turn the pan slightly on it's side and spin the apples around in the caramel. I lift them and allow the excess the drip off and then lightly scrape the very bottom of the apple on the edge of the pan and allow the excess to fall back into the pan. We picked our apples up at the orchard but if your apples are store bought, you really need to quickly drop them into boiling or very hot water, rub them with paper or dish towels to remove the wax and then dry them completely so that the caramel will stick. I was serving these the same afternoon and did not refrigerate them. The caramel set up fine and then I drizzled with a little melted chocolate. The kids loved them and we will make them again. Thanks for sharing!

Skinny Gingerbread Latte

Reviewed: Oct. 21, 2010
We love this one too, Tat! The spices are perfect and the taste is better than the coffee house. This has quickly become another favorite. We now enjoy your Skinny Pumpkin Latte in the morning and this Gingerbread Latte in the evenings after work. I can't wait to get home so I can sit down and relax with a cup of this. I can't say enough about your recipes. Thank you so much for sharing!

Foolproof Chocolate Fudge

Reviewed: Oct. 20, 2010
Easy and fast with a nice smooth consistancy. I added mini marshmallows and chopped walnuts and this helped to boost the flavor and interest. Great substitution for real fudge if you don't have the time or are short on ingredients and need a quick candy. This is definately not like the old fashioned fudge recipes and I probably wouldn't serve it on my holiday platters or give it as a gift but the kids really enjoyed it and asked to take some home. They had fun helping make this and I would do it again with them and try different add-ins and flavors.

Simple Salmon Chowder II

Reviewed: Oct. 20, 2010
Our first Salmon Chowder. Super fast and simple! The author's description "hearty but mild flavored" is what made my decision to chose this recipe over the other Salmon Chowders and it is as described. We really enjoyed the milder salmon flavor and the consistancy and heartiness is perfect for us. The subtle smokey flavor from the bacon is very nice. I followed the recipe, using low sodium chicken stock (due to the amount of salt in the packaged potato mix), fresh dill (approx. 2 tsp) instead if dried and more pepper to taste. Everyone really enjoyed this and we will make it again. The only change I will make is to replace the packaged sliced potatoes with fresh cubed, but still use the seasoning envelope (don't know what I will do with the packaged potatoes?) Hubby and kids didn't seem to be bothered by the texture of the dried potatoes but I really noticed the difference. Thanks for sharing a great recipe!

Skinny Pumpkin Spice Latte

Reviewed: Oct. 17, 2010
100 Stars! This is that good! DH makes the coffee on the weekends. I left this recipe on the counter yesterday morning and he made it. This morning he woke me up to find out where I put the recipe so he can make it again. We love it! Followed the recipe except used Lactose Free Milk and Coffee Mate French Vanilla Non Dairy Liquid Creamer in place of the vanilla syrup. This is really going to save us a lot of money. I was stopping at Starbucks every morning and spending approx. $4.50 on a Pumpkin Latte! Never again. This is just perfect. Thank you Tat for sharing!! (I can't wait to make your Gingerbread Latte next :)

Apple Butter Spice Cake

Reviewed: Oct. 13, 2010
We love this cake! Soft, moist, tender and slightly dense with a perfectly spiced and crunchy topping/filling. I used toasted wheat germ and the "All Day Apple Butter" from this site and could not be happier with the outcome. This is perfect as written and there is no need to change a thing. Although not needed, I added a drizzle of caramel and it is wonderful with or without. Very happy that I found this recipe. It will be enjoyed often. Thanks for sharing!

Autumn Harvest Cookies

Reviewed: Oct. 12, 2010
These are so good! Please note this is not a overly sweet cookie. It is nicely spiced, soft and chewy from the oats and craisins (what I used) with a little crunch from the nuts with a slight orange boost. Tastes like Autumn in one little bite. We love them and will prepare them again soon. Thanks for sharing!

Barbecued Alaskan Salmon

Reviewed: Oct. 12, 2010
This will be a repeat here. We all loved it. Followed the recipe except prepared 1 1/2 times the glaze and used all of it while grilling. The salmon flavor shines through the perfectly balanced glaze in the background. Not too sweet or overpowering. Thanks for sharing!

Apple Cider Biscuits

Reviewed: Oct. 12, 2010
Flavor was good and the texture was light and soft. I'm not sure what I did wrong and I believe I followed the recipe exactly (except sprinkled quite a bit more cinnamon on top) but my biscuits did not rise that much at all. I doubled checked everything and the baking powder is less than a month old. The flavor and texture is good and I have very fresh apple cider that I purchased a few days ago, so I will try again. Thanks for sharing!

All-Day Apple Butter

Reviewed: Oct. 12, 2010
This is one of the best apple butter recipes I have ever tasted. We love it! I only had about 2 1/2 pounds of apples (after peeling and coring) and adjusted the servings and followed the recipe. The smaller crockpot that I used for this cooks very hot, even on low. The whole process was complete in approx. 9 hours. After taking the lid off the last hour, I used a whisk and it worked perfectly resulting in a smooth, dark, very flavorful apple butter. I will be making it again very soon. The first batch is almost gone! Thanks for sharing!

Country Style Fried Potatoes

Excellent! Everyone loved them. I had left over baked potatoes from dinner the night before so just peeled and used those. This really made preparing these quick and easy. The garlic powder and paprika is perfect. Thanks for sharing!

Lacy Oatmeal Cookies

Reviewed: Oct. 12, 2010
We love these cookies. Followed the recipe except baked them on an ungreased sil-mat and they were perfect. I found that if you press them down slightly with your fingers before baking, they bake more evenly. Left half of them plain and played around with dipping the rest in chocolate and folding some of them around a wooden spoon handle. They were pretty and tasted so good. These were fun to make and we will enjoy them again. Thanks for sharing!

Ranch Dressing II

Reviewed: Oct. 12, 2010
Good Dressing or Dip! Used it as a "dip" for Bacon Cheese Fries and it worked out great. Flavor is much better than bottled. I would use the buttermilk or replace a portion of the sour cream with the buttermilk to use it on a salad due to the thickness. We enjoyed this. Thanks for sharing!
