No Bake Cheesecake I

Reviewed: Oct. 24, 2011
Super Fast, Super Easy and really good! My dad requested a Cheesecake for dessert Sunday. He didn't mention it until Sunday morning and I knew I didn't have time to make a "real" cheesecake. I started searching for something quick that used some ingredients I already had here. I did make some changes based on previous reviews and what I had on hand and ended up with a great alternative to the real thing. My dad and everyone else really enjoyed this and I know it will be made often. I didn't have pecan sandies so I used the "Graham Cracker Crust" (Janaan Cunningham) from this site. I used 1 1/2 times that recipe, wanting a thicker crust. For the cheesecake, I upped the servings to 12, and then increased the cream cheese to 1 pound, decreased the lemon juice to 2 TBS and added in the zest of approx 1/2 lemon. I also skipped the optional strawberries for topping and followed the instructions for the Orange Marmalade topping from the "Citrus Cheesecake" (Nathan14). A wonderful creamy, flavorful, pretty dessert! Thanks for sharing!!

Downeast Maine Pumpkin Bread

Reviewed: Oct. 18, 2011
This is excellent pumpkin bread!! Very moist but not oily or heavy. Wonderful fall flavor and spice. Perfect for the upcoming holiday season for gifts, trays or brunch. Followed the recipe, only increasing the cinnamon a little (we like nicely spiced, flavorful food), and adding a wonderful brown sugar, flour, cinnamon and pepitas topping that was part of a pumpkin bread recipe on bakingdom's blog. My entire family is really enjoying this bread. Hubby mentioned that he is looking forward to a slice with his coffee in the morning. It is very good warm out of the oven and room temp. I think it would also be excellent with a light cream cheese spread. The recipe yielded two perfect 9x5 loaves that baked 1 hour in my oven at 350. I'm happy that I finally tried this highly rated recipe and will prepare it often. Thanks for sharing!

Country Cinnamon Swirl Bread

Reviewed: Oct. 15, 2011
Perfection! The flavors and sweetness is spot-on and reminded us of a cinnamon roll. The texture is wonderful - perfectly moist but not too dense. Followed the recipe with two small changes. I replaced the 1/3 cup of white sugar with light brown sugar in the cinnamon/sugar layer and added the sugar/cinnamon/butter topping that "naples34102" mentioned in her review. That topping is the perfect addition and just adds more wonderful flavor and a little crunch that we loved. My family can't stop eating and talking about this bread. It's addictive! Hubby and I managed to grab the last small piece and hide it to enjoy with our coffee in the morning. This has already been requested as an addition to the upcoming holiday brunch menus. I won't be waiting for the holidays to make this again. Thanks for sharing!

Chicken and Gnocchi Soup

Reviewed: Oct. 15, 2011
Christina, this soup is excellent! Everyone here absolutely loves it. Delicious, easy, fast and full of ingredients that we all love and are always in the pantry/fridge. Followed the recipe (doubled to feed my crowd) with the exception of only adding a handful of the baby spinach leaves, knowing that there are a couple of the little ones that would not be happy seeing them. Well, I should have gone ahead with the full amount... they ate every bite with no complaints and lots of compliments and second helpings. The "cooks note" with the chicken tenders tip was perfect. There was a long "discussion" over who should be allowed to take the leftovers home with them this evening. This really is the best soup that we have had in a long time. We will enjoy this often. Thanks for sharing!

Coconut Custard Pudding

Reviewed: Oct. 9, 2011
Wonderful Recipe! I only had 5 here for dinner so I cut the number of servings in half and it worked out great. After reading the reviews, I decided to drop aprox 1 TBS of shredded coconut in the bottom of the ramekins (for individual servings) before pouring in the custard and it really bumped up the coconut flavor. We really enjoyed this. Thanks for sharing!

Orange Banana Nut Bread

Reviewed: Oct. 6, 2011
This was a hit! Perfect texture and great combo of flavors. Followed the recipe, only adding the zest of 1 1/2 oranges and substituting 1/2 cup of raisins and 1/2 cup of dried cherries for the walnuts. Also, used freshly squeezed orange juice. Everyone really enjoyed this and it will be a repeat soon. Thanks for sharing!

Dark Chocolate Brownies

Reviewed: Oct. 6, 2011
I was really looking forward to trying this recipe. Brownies are hubby's favorite dessert and I have been looking for the Dark Chocolate Morsels in our area for a while and finally found them. These just didn't go over very well here. We do LOVE dark chocolate and fudgy brownies over a cake texture. The texture of these (even after adding approx 15 min to the bake time) was more like partially cooked fudge. The bottom and top were cooked but the middle never got done. The dark chocolate flavor is also not as strong as I was hoping for. It's no secret that we love our sweets here but these were just too sweet and the flavor was flat. I followed the recipe, leaving out the nuts. I enjoyed trying a new recipe and new product but will keep looking for a dark chocolate brownie recipe for us.

Smooth Sweet Tea

Reviewed: Oct. 4, 2011
The best sweet tea I have ever had. We were curious as to how much of a difference the pinch of baking soda would make. To our surprise, it makes all the difference in the world. So smooth, absolutely no bitterness and no cloudy tea! Perfect. We have been using this recipe for a while now and I make a double batch a couple of times a week. It's always gone in one day with this crowd. Thanks for sharing!

Cinnamon Apple Rolls

Reviewed: Oct. 3, 2011
My family really liked these. I upped the servings to 12 to feed my crowd and made a couple of changes in the "topping" portion of the recipe. I used unsalted butter in place of the Crisco Oil, increased the cinnamon a little and left out the nuts. It is a very sweet topping. Followed the recipe for the "roll" portion and we loved the texture and flavor of the rolls. They are hard to described. Hubby and kids said, "soft, fluffy, silky....kinda like a very soft biscuit but better!" The dough was pretty easy to work with but it was soft enough that I did have a couple of small areas that I had to pinch back together. It all worked out in the end and we enjoyed a great autumn dessert this evening. I will make these again and may throw in a handful of dried cranberries next time.

Pumpkin Shortbread Bars

Reviewed: Oct. 2, 2011
Yum! I could tell by reading the ingredients that the topping included too much flour and the filling needed the addition of a "fall" spice. After reading the reviews and looking at the photos, I decided to go with "footballgrl16" review and make the bars exactly as she recommended. I am so glad I did. Everyone loved the taste/texture combinations and I recived many compliments. It reminded some of a pumpkin pie. I wouldn't hesitate to make these again exactly like this batch. Thanks for sharing!

Green Pepper Tomato Salad

Reviewed: Sep. 29, 2011
We really enjoyed this salad. Love the perfect balance of acid and sweet and texture of the fresh ripe tomatoes and crunchy peppers and celery. I used red, orange/yellow heirloom tomatoes, shallots and a mixture of red/yellow/orange/green peppers to use up some stuff on hand. Very happy to find this quick, easy and simple recipe. Thanks for sharing!

Caramel-Apple Crisp

Reviewed: Sep. 28, 2011
Prepared for the Recipe Group this week. This is very good and my family enjoyed it but it is very sweet! Followed the recipe except increased the servings to 9 to feed my crowd and left the caramel topping at 1/2 cup (it was still a little too sweet for me.) Great contrast of flavors (caramel/apple is one of our favorites) and textures with the crispy topping. I'm sure it will be requested again. Thanks for sharing, Kinza!

Campbell's Apple Strudel

Reviewed: Sep. 21, 2011
Very easy and most of my family enjoyed it. Follwed the recipe with the exception of omitting the raisins and using parchment paper instead of greasing the pan. I will definately use a little more sugar next time, double the cinnamon and include the raisins or use dried cranberries. Also, my oven temperature is accurate but at 35 minutes, although a perfect golden brown exterior, the middle of the dough was just a little under-baked.

INCREDIBLE Raspberry Cheesecake Cookies

Reviewed: Sep. 13, 2011
I knew the second that mis7up posted these cookies and mentioned them on the "buzz" I had to make them. They are absolutely YUMMY! 4 ingredients, 20 minutes and you have a perfect, addictive, "INCREDIBLE~Raspberry Cheesecake Cookie"!! The Raspberry Tidbits (baking chips) are one of the best (new to me) products I have used in a long time. Thank you for finding them and posting it. They have so much flavor and take these cookies to a new level. We love the soft texture of these cookies and the Cream Cheese makes them taste straight from the bakery. You would never know that a packaged sugar cookie mix is used. I got 32 cookies out of this and between 5 of us, there are only 18 left (I just made them earlier today!! :) I also ordered the Strawberry and Blueberry Tidbits and can not wait to try these with those flavors. This is an excellent recipe, mis7up. Thank you so much for sharing!!!

Best Bread Pudding with Vanilla Sauce

Reviewed: Sep. 12, 2011
This is the best Bread Pudding I have ever made! Everyone raved. I used a 1 lb loaf of Italian Bread and increased the servings to 12 (backed the white sugar down to 1 3/4 cups) and left the vanilla sauce at 8 servings. Absolutely perfect in every way. Thank you, SouthernGma for sharing this recipe. It will be used often and passed on to the family.

Peppery Cheese Bread

Reviewed: Sep. 9, 2011
Prepared for the Recipe Group. Hubby and son really liked this. My daughter and I like a lighter texture. I let the sour cream and egg sit at room temp for approx. 1 hr before proceeding. Proofed the yeast in 110* water and the sugar for 10 min. I followed others suggestions and used approx. 1 1/2 cups cubed (small) cheese (1 cup sharp cheddar and 1/2 cup colby jack). Hubby loves black pepper so I used a heaping 1/2 teasp. I also added about 1 1/2 TBS snipped chives to the batter. It took 1 1/4 hours for the dough to double in a 9 x 5 glass loaf pan and was perfectly done at exactly 35 minutes. Very tasty and filling. Definately better if served warm from the oven or warmed up the next day. I will make this again for the ones in my family that really liked it. Thanks for sharing!

Peach Whirligigs

Reviewed: Aug. 30, 2011
My family flipped over these! I changed the number of servings to 8 and then made a couple of small other changes after reading the reviews and needing to use what I had on hand. I used butter in place of the margarine, decreased the water to 2 cups, decreased the sugar to 1 1/2 cups (and that amount was plenty!), used 3 TBS of cornstarch and added a good dash of cinnamon to the peach mixture. I also used half and half in place of milk. These are wonderful! The dough is easy to work with, the recipe if fast to throw together and the combination of flavors and textures is perfect. My family can not wait for me to make them again. Thanks for sharing!!

Tarte aux Moutarde (French Tomato and Mustard Pie)

Reviewed: Aug. 27, 2011
Prepared for the Recipe Group. Hubby and I both really enjoyed this for lunch today. All of the flavors go together so well and it is a very easy recipe that was fast to throw together with great results. After reading the reviews, I made a couple of small changes. I pre-baked the crust for 10 min at 350 and allowed it to cool for a few min. For the mustard, I used a couple of TBS of Grey Poupon and then mixed in a couple of tsp of stone ground mustard and spread approx 3/4 of that mixture on the crust. I sliced the tomatoes and then placed them all on paper towels for approx 30 min to drain and then proceeded with the recipe. All of these small changes worked out very well in preventing a soggy crust and watery filling. We will definitely make this again very soon. Thanks for sharing!!

Mexican Rice III

Reviewed: Aug. 25, 2011
Absolsutely declicious! Perfect. Followed the recipe with the exception of the fresh tomato. I had 3 heirlooms but am holding on to those for another recipe so I opened a can of diced tomatoes, drained and used about 1/2 the can. Worked out great! Hubby and kids said one of the best rice dishes yet. Thanks for sharing!

Jan's Pretzel Dogs

Reviewed: Aug. 20, 2011
Everyone absoslutely loved these! Followed the recipe and will be making these a lot during the upcoming football season. I was a little worried going in because I have very little (next to none) experience with yeast but the instructions are very well written and they were so much easier than I imagined. Made half with Ballpark all beef franks and half with Hebrew National brand (family has different pref.) and half with salt and half without. All were equally good and all eaten quickly! Thanks for sharing your wonderful recipes, What's for dinner, mom?!
