Vera Cruz Tomatoes

Made these for Recipe Group this week. We have never had stuffed tomatoes before and we really liked these. Used just picked tomatoes from the garden. Everyone enjoyed the freshness of the tomatoes and commented on being able to taste each ingredient. All of the flavors went together well. I used fresh baby spinach and experienced a little bit of the watery consistancy that "sassyoldlady" mentioned when cutting them open. We usually cut back on the amount of hot sauce called for in a recipe, but everyone thought that in this one, we actually should have added a tad more. Neither of these little complaints will stop me from making these again before the end of tomato season this summer. Thanks for sharing!

Grilled Shrimp Scampi

Excellent Shrimp! We could not have been happier. Followed the recipe and would not change a thing. Great flavor and the grilling time was right on. Served these with steak for a "surf and turf" yesterday to a very large crowd and everyone loved these. I was so surprised that a 30 min marinade could produce so much flavor. I'm sure we will make these again very soon. Thanks for sharing!

Raspberry Custard Kuchen

First time making or trying kuchen and we really, really loved this. Very easy recipe. I followed it except I didn't really measure the berries. I used mostly raspberries but also threw in a handfull of blackberries that I needed to use immediately. I just made sure to cover the crust/sugar flour mixture. I used a 9" springform and it worked great. The tart/sweet flavors are very pleasant and it is not heavy as I thought it would be with "custard" in the title. Just perfect. I will make this again soon and may try different fruits. Thanks for sharing!!

Strawberry Chantilly

Everyone really enjoyed this! It is very easy and fun to make and you end up with a refreshing, light, pretty dessert. I used my Kitchen Aid and at the 9 minute mark, it was almost coming over the top of the bowl. I was a little worried that it wasn't going to fit in the pan. Once the whipped cream is folded in, it is the perfect amount. It may be a little difficult to cut immediately out of the freezer. I decided to let it sit for about 10 min on the counter and it was perfect for us. This will be a repeat here. Thanks for sharing!

Cherry Tomato Corn Salad

First time preparing a corn salad and we loved it. Refreshing, light side that would go well with so many main dishes. So fast and easy it would be great for a weeknight, BBQ or Potluck, or a light lunch. We will be enjoying this often. Thanks for sharing!

Out of the Hat Rice

Perfect rice dish to go with the Broiled Tilapia Parmesan (from this site). Followed the recipe with the exception of using Low Sodium Chicken Stock instead of water and added the lemon juice to taste at the end. We enjoyed this and will make it again. Thanks for sharing!

Parmesan Orzo

This was so good. Followed the recipe without any alterations except changed the servings to 6 and it was a perfect side with the baked scallops (John Bragg's recipe from this site) and steak. We loved the slight tang and flavor from the chive and onion cream cheese. Thanks for sharing! Update: This does re-heat well for leftovers. Just add a small splash of milk and a little of the cream cheese/chive spread and stir. We covered and heated in the microwave for a min or two and it was just as good as the day before. Love it!

Baked Scallops

This recipe is excellent! Followed exactly with the exception of using sea scallops and everyone (even the son who doesn't like seafood) loved it. The contrast between the flavorful crunchy topping and the delicate scallops is perfect. The baking time (20 min) was spot on in my oven. We will enjoy this again very soon. Thanks for sharing Mr. Bragg!

Lemon Panna Cotta With Raspberry-Orange Sauce

I'm not sure why, but I always believed that Panna Cotta was difficult, time consuming or complicated. I could not have been more wrong! This was so easy, fast and fun to make and the outcome is fantastic! I followed the recipe exactly. We loved it. I am sure I will be making this often. Thanks for sharing!

Sausage, Peppers, Onions, and Potato Bake

The minute I saw Christina's photo and read her review of this recipe, I new we would love it. Wow! It is excellent!! Followed the recipe with the exception of using 1 each of green, red, yellow and orange peppers and threw in a couple of carrots I needed to use up. I also did not peel the new red potatoes. A couple of the kids and I don't usually care for spicey (hot), so I used 1 pound of sweet itialian and 1 pound of hot italian sausage. This was the perfect blend for us. I also threw in a little fresh thyme and fresh parsley right before putting it in the oven. It did take apporox. 40 min in my oven. This is definately a recipe that will be a reapeat here. Everyone loved it and said they are looking forward to having it again soon. Thanks for sharing!!

Toasted Coconut, Pecan, and Caramel Pie

Excellent Pie! Very quick to put together and is super YUMMY! It is a very rich pie that can be cut into very small servings. The toasted coconuts and pecans are perfect with the cream cheese. Everyone really enjoyed this and several asked for the recipe. I would be happy to make and serve this again and again. Thanks for sharing!!

Raspberry Almond Coffeecake

This is so good! We love it. Followed recipe with the exception of using almond extract and half and half in the glaze in place of vanilla and milk. Perfectly moist, pleasantly flavored and the addition of fresh fruit puts it over the top. Presentation is pretty as well. We will enjoy this many, many more times. Thanks for sharing!

Berries 'N' Cream Brownies

We had company coming this evening and I got out of work about 2 hours later than I had planned. I knew I had fresh berries and Cool Whip so I did a quick search and this came up. Thanks goodness I had brownie mix as well! Worked out great. I used raspberries, as that is what I had on hand and didn't spread the Cool Whip, just dolloped a spoon on top of the cooled brownies and scattered some berries on top. Some people wanted chocolate drizzled, some did not. Either way, this was a perfect ending to our dinner this evening. Use your favorite brownie mix, very fresh, sweet berries and fresh whipped cream (I will use that next time) and this really is a great, "in-a-pinch" dessert. Thanks for sharing!

Peanut Butter Cup Brownies

It does not get any easier than this! Followed the directions on the box and these turned out perfect. I used paper liners, allowed the cups to cool completely before removing the liners and did not have any problem at all. Filled the muffin tins approx 2/3 full and then placed candy in the center and baked for 22 min. Perfect little dessert this evening. Thanks for sharing!

Fresh Peach Dessert

Great Dessert! Everyone enjoyed it and several commented on the fresh peach flavor. I followed the recipe with the exception of using 7 peaches (mine were not very big) and I forgot to reserve 1/4 cup of the crust to sprinkle on top. I am looking forward to making this again before the end of summer and fresh peaches. Thanks for sharing!

Grilled Lemon Herb Pork Chops

Moist, flavorful chops. We marinated these for about 6 hours and I think next time I will try to remember to start marinating the night before. We really liked the flavor and believe that marinating longer will bring it out even more. The grilling time was spot on. Thanks for sharing!

Zucchini with Farfalle

Everyone loved this (including my 17 month old granddaughter!) Followed the recipe with the exception of adding yellow and orange peppers with the zucchini. This worked out very well and I will do the same when I prepare this again (and that will be soon!) We have found a new favorite recipe to use up all the zucchini from the garden. Thanks for sharing!

Warm Corn Salad

This is very, very good! The natural sweetness from the fresh corn and vidalia onion (personal pref) and light herb flavor from the fresh parsley and chives makes this a very refreshing summer side dish. Followed the recipe with the exception of cooking the onion for a few minutes before adding the corn and then proceeded as written. Perfect addition to our grilled pork chops tonight. Everyone here is looking forward to enjoying this again soon. Thanks for sharing!

Light and refreshing dessert! Like another reviewer, I doubled the recipe but used the entire 8 oz. package of cream cheese instead of 6 oz. It tasted perfect. This is extremely fast and easy with great results. Thanks for sharing!
