Marinated Cherry Tomato Salad

I was looking for something fresh and light tasting this evening for a side dish. The kids came back from the garden with a TON of fresh tomatoes (cherry, grape, heirloom, etc..) to use up. This is the recipe that we picked to use all of those tomatoes and everyone was very pleased. The combination of herbs/flavors is perfect. This is a keeper. Thanks for sharing!

Scalloped Cheese Potatoes

Family liked this and commented that they would like to have it again. Followed the recipe with the exception of whisking 1 can of milk into the soup before adding to the potatoes and this worked out very well. My only complaint is there was ALOT of oil/butter pooled on the top when I took it out of the oven. So much, that I had to take several paper towels and soak it up before I could put it on the table. I'm not sure if it was the cheese or the addition of the butter (which is not needed) or a combination of both. I will leave out the butter next time and shred the cheese by hand (purchased pre-shredded this time). Family enjoyed it so I will make it again. Thanks for sharing!

5-Minute Coleslaw

Perfect Coleslaw! Tastes wonderful, super fast and extremely easy. Followed recipe only adding a tiny bit more lemon juice and salt and pepper to taste. Also sprinkled with celery seed right before serving. Hubby and son are the coleslaw lovers here and they both said that this must be the new go to recipe, no more store bought stuff. Thanks for sharing!

Zesty Slow Cooker Chicken Barbecue

Threw this in the crock pot at 11:30 a.m., stirred it once at 2:30 and we were sitting down to eat at 5:30 with compliments, upon compliments all around. Everyone loved it. Followed the recipe with no alterations and ended up with very flavorful, moist chicken. We will do this one again! Thanks for sharing!

Cracked Sugar Cookies I

Hubby's favorite is plain sugar cookies and requested them today. He loves these cookies! Everyone loves these cookies! Super fast, super easy and absolutely perfect in every way. I can't think of any reason to need another sugar cookie recipe here. We will enjoy these often. Thanks for sharing!!

Seasoned Couscous

Used low sodium chicken stock in place of water and granules with lots of fresh basil and parsley along with the other ingredients. This ended up a little dry and bland tasting for us. I am going to try again with fresh onion, garlic and more herbs and either increase the liquid or use a little less couscous. We like the idea and look forward to trying it again with a few tweaks. Thanks for sharing!

Corn and Zucchini Melody

Fast, Easy and Delicious! Everyone loved it. Followed recipe except cooked onions for a few minutes and then added zucchini and corn for the last 6 or 7 minutes. Perfect side dish. Thanks for sharing!

Baked Maryland Lump Crab Cakes

Excellent Recipe! DH came home with Lump Claw Meat due to the cost ($21.00/pd vs 11.99/lb) and these still tasted fantastic. Used 2 eggs in place of the egg substitute and also lightly breaded with Panko before baking. Topped with a quick Lemon Aioli. I will reduce the Old Bay a little next time due to the salt but there were no complaints and many compliments. Thanks for sharing!

Orzo with Parmesan and Basil

Perfect as written. Didn't change a thing. Everyone loved it. This recipe is easy, on the table in under 30 minutes and delicious. If possible, use freshly grated Parmesan. It does make a difference. This is a keeper. Thanks for sharing!

Vera Cruz Tomatoes

Made these for Recipe Group this week. We have never had stuffed tomatoes before and we really liked these. Used just picked tomatoes from the garden. Everyone enjoyed the freshness of the tomatoes and commented on being able to taste each ingredient. All of the flavors went together well. I used fresh baby spinach and experienced a little bit of the watery consistancy that "sassyoldlady" mentioned when cutting them open. We usually cut back on the amount of hot sauce called for in a recipe, but everyone thought that in this one, we actually should have added a tad more. Neither of these little complaints will stop me from making these again before the end of tomato season this summer. Thanks for sharing!

Grilled Shrimp Scampi

Excellent Shrimp! We could not have been happier. Followed the recipe and would not change a thing. Great flavor and the grilling time was right on. Served these with steak for a "surf and turf" yesterday to a very large crowd and everyone loved these. I was so surprised that a 30 min marinade could produce so much flavor. I'm sure we will make these again very soon. Thanks for sharing!

Raspberry Custard Kuchen

First time making or trying kuchen and we really, really loved this. Very easy recipe. I followed it except I didn't really measure the berries. I used mostly raspberries but also threw in a handfull of blackberries that I needed to use immediately. I just made sure to cover the crust/sugar flour mixture. I used a 9" springform and it worked great. The tart/sweet flavors are very pleasant and it is not heavy as I thought it would be with "custard" in the title. Just perfect. I will make this again soon and may try different fruits. Thanks for sharing!!

Strawberry Chantilly

Everyone really enjoyed this! It is very easy and fun to make and you end up with a refreshing, light, pretty dessert. I used my Kitchen Aid and at the 9 minute mark, it was almost coming over the top of the bowl. I was a little worried that it wasn't going to fit in the pan. Once the whipped cream is folded in, it is the perfect amount. It may be a little difficult to cut immediately out of the freezer. I decided to let it sit for about 10 min on the counter and it was perfect for us. This will be a repeat here. Thanks for sharing!

Cherry Tomato Corn Salad

First time preparing a corn salad and we loved it. Refreshing, light side that would go well with so many main dishes. So fast and easy it would be great for a weeknight, BBQ or Potluck, or a light lunch. We will be enjoying this often. Thanks for sharing!

Out of the Hat Rice

Parmesan Orzo

This was so good. Followed the recipe without any alterations except changed the servings to 6 and it was a perfect side with the baked scallops (John Bragg's recipe from this site) and steak. We loved the slight tang and flavor from the chive and onion cream cheese. Thanks for sharing! Update: This does re-heat well for leftovers. Just add a small splash of milk and a little of the cream cheese/chive spread and stir. We covered and heated in the microwave for a min or two and it was just as good as the day before. Love it!

Baked Scallops

This recipe is excellent! Followed exactly with the exception of using sea scallops and everyone (even the son who doesn't like seafood) loved it. The contrast between the flavorful crunchy topping and the delicate scallops is perfect. The baking time (20 min) was spot on in my oven. We will enjoy this again very soon. Lemon Panna Cotta With Raspberry-Orange Sauce

I'm not sure why, but I always believed that Panna Cotta was difficult, time consuming or complicated. I could not have been more wrong! This was so easy, fast and fun to make and the outcome is fantastic! I followed the recipe exactly. We loved it. I am sure I will be making this often. Thanks for sharing!

Sausage, Peppers, Onions, and Potato Bake

The minute I saw Christina's photo and read her review of this recipe, I new we would love it. Wow! It is excellent!! Followed the recipe with the exception of using 1 each of green, red, yellow and orange peppers and threw in a couple of carrots I needed to use up. I also did not peel the new red potatoes. A couple of the kids and I don't usually care for spicey (hot), so I used 1 pound of sweet itialian and 1 pound of hot italian sausage. This was the perfect blend for us. I also threw in a little fresh thyme and fresh parsley right before putting it in the oven. It did take apporox. 40 min in my oven. This is definately a recipe that will be a reapeat here. Everyone loved it and said they are looking forward to having it again soon. Thanks for sharing!!
