Chicken Breasts Pierre

Reviewed: Sep. 19, 2012
this was delicious! Martin loved it. I made the sauce for 6 even though we only had 2 large chicken breasts and if was perfect. Really good sauce and the acidity means that the chicken is really tender. Changes I made: 1. Used glutenfree brown rice flour 2. I added garlic and onion when browning the chicken 3. used a larger can of tomatoes 4. added celery 5. only used half the chili powder 6. Added fresh parsley in the last 5 minutes. 7. added an extra half cup of water

Chocolate Chip Banana Muffins

Reviewed: Feb. 18, 2012
I made for my husband this week and he said they were the best muffins he had ever had, so I want to note what I did. I used brown instead of white sugar, and milk instead of yogourt. Used 1 large banana that was perfectly rip and not soft yet.

Slow Cooker Texas Pulled Pork

Reviewed: Nov. 2, 2010
loved it!!! used beef broth instead of chicken, omitted chili powder and used bone-in pork shoulder chops (which were much cheaper, and the bone added flavour and the meet fell of it for easy removal when pulling). So good!!

Cajun Crawfish and Shrimp Etouffe

Reviewed: Oct. 18, 2009
loved it! Want to remember exactly what I did because I want to make it again. Boyfriend Martin loved it too, which was surprising. Used butter and rice flour and mixed the 2 together for only about 5 minutes. Added 2 cloves garlic, one onion and celery and cooked for 5 minutes stirring. Added 1 yello pepper. When it started to look brown and like it could burn I added 1 cup of veggie stock and a carton of grape tomatoes each cut in half. Added 1t hotsauce, a splash of Lea & Perrins and a generous shake of paprika. Let cook, covered on low for about 10 minutes, adding a bit of extra water once. Added frozen crab from the market and kept cooking for about 10 minutes, then added fresh scallops and let cook for 6 minutes. Adjusted spices (more hot sauce and lea & perrins and a bit of salt and pepper) and added fresh parsely. Done! and soooo goood!

Sage Pork Chops

Reviewed: Sep. 15, 2009
loved it! such a nice sage flavour. I used only 1/4 teaspoon of salt alongside 1 teaspoon of sage and 1 teaspoon of pepper on 2 large bone-in chops. 2 cups of beef stock and cooked covered for 45 minutes after adding the stock. Just under 2 tablespoons of butter. What really made me happy was the gravy! I took the advice of other cooks and added 2 tablespoons of cornstarch mized with 2 tablespoons of cold water and it worked out so well! It didn't separate and it had so much flavour. This is amazing for gluten-free gravy... a miracle! Thank you for this recipe. Will make again many times.

Baked Orange Salmon with Fennel

Reviewed: Aug. 21, 2009
This recipe sounded really neat, but tasted even better than I expected. I did not have the Old Bay seasoning, so I added a pinch of salt, pepper, paprika, mustard and celery seasonings to the fennel as it sauted in the oil. I used rainbow trout and cooked it for 15 minutes. Very moist and tasty.

I had all of the ingredients on hand apart from the anchovy paste, so I didn't use it, but otherwise I followed the recipe exactly. It was awesome! I thought that it made just the right amount for 2 nights of pizza for my boyfriend and me. Will certainly make again!!

We thought this tasted great and we would like to have it again soon. Served it with baked potatoes, grilled zucchini and a salad and this worked well. As per others suggestions, I added a tsp of Lea & Perrins, a little bit of tabasco, celery seasoning and garlic powder. I also only cooked it for 45 minutes. Thanks for the recipe!!
